So, I have quite a few cards I enjoy using in my decks that I find pretty valueable, so I wondered if it's acceptable to use proxies of those cards in FNM's and such if I bring the toploaders with the original card in it as well?
And more importantly: My printer is one of those mono-colored black/white laserprinters, is it acceptable to bring black/white proxies? I fully understand it's harder to see the color identity of the cards, so (if it's acceptable) is it necessary to eventually use a sharpie to color the card in some way? If so, which way is the best way to do this?
Rules from Wizards are pretty strong against proxies : they're considered as counterfeits. No TOs nor Judges are supposed to accept those in any sanctioned tournaments.

Yeah. The only officially permissible proxies are checklist cards. If a card becomes unusable during a tournament, a judge may create a sanctioned proxy on the spot. I think you can ask them to do so if you have a card that is damaged such that it might be unplayable even in a sleeve, but that is less likely, and is obviously at their discretion.
Just remember that some years back, sleeves were themselves not permitted. That meant a much higher likelihood of damaged cards, AND a much lower tolerance for card damage before a card was considered marked.

I'd rather just remove the card from the deck all together then, rather than removing that foil NM Jace, The Mind Sculptor from the top loader..
