Getting the last word does not mean that you win the argument.
All upkeep triggers trigger at the same time. If you had 1 card before the untap step, you will have 1 card when both triggers check. The "discard a card" one will trigger but the Hellbent one will not. (Conditional triggered abilities check for the condition both on triggering and on resolution.)
The Hellbent one can use X or it can stay the way it is. Doesn't matter. For better English, say "Then sacrifice ~this~ and all creatures you control."

Actually, you want the two different outcomes, if possible, to be just one sentence each:

not much difference really, but it nicely seperates the different outcomes so there is no confusion as to whether or not you sacrifice.
