The only problem with mana burn triggers is that they won't work with Upwelling or "Sakiko mana", which doesn't seem to be the original intent. Making it workable with these cases would make the card much more broken, though.

I didn't intend on it working with Upwelling or Sakiko mana since, well, that'd be broken in half. Amount of mana in your mana pool x number of phases up until your opponent dies would be ridiculous.
So your wording is actually a lot closer to what I was going for than what I had to start with.
Say I have a permanent which reads:
"At the end of each phase, CARDNAME deals damage equal to the amount of mana in your mana pool to target creature or player."
Essentially, this card wants to deal damage equal to the amount of unused mana at the end of a phase, before it 'burns out'.
Would this wording be correct? Maybe some reminder text to help?

Not all phases are divided into steps that way...I think.
Like, I couldn't have it trigger at the 'end of main phase' 'end of upkeep' steps cause they don't exist.
