For this one. I'd word it more like: "Whenever a spell or ability an opponent controls with a single target could legally target enchanted creature, change its target to enchanted creature."
But the thing is, this is way to powerful for one mana. I'm assuming the point of it is to draw in a kill spell and then resurrect the creature via undying. But this draws in all abilities (even triggered) and spells. So any giant growth, any aura, any anything. You would just need to make the creature indestructible, and you've just screwed your opponents for one black mana.
I would make it like:

Enchanted Creature has Undying
Whenever an opponent casts a spell that could legally target enchanted creature, if it doesn't, that spell's controller loses 2 life.
