This is a tough exercise as Ravnica is close to anti-tribal, trying to show a diversity of races since it is the cosmopolitan plane.
I suppose we could take an iconic/characteristic approach to this.
Azorius - what you have seems good
Orzhov - they do have Angels as a potential iconic, although Spirits are weird since they can be a variety of sizes and include the guild leader. Thrulls as characteristic is cool.
Dimir - sure
Izzet - the status of Dragons on Ravnica is weird but this would be the place to put them. Weird is their "unique" type but Wizard seems right for characteristic
Rakdos - Demon for iconic yeah. They do also have a lot of Rogues I think
Golgari - Gorgons maybe for iconic. They get both elf and zombie along with insect and fungus and stuff at characteristic
Gruul - Cyclops for iconic. Warrior seems ok, they have some Beasts too
Boros - Angel iconic for sure, and Soldier characteristic yeah. Most clearcut probably.
Selesnya - Centaur and Saproling are their token types that they care about a lot. Plants and elementals...hard to pin down.
Simic - Mutant used to be the characteristic sure but I guess merfolk now. Ooze at iconic?

Powerwise? I don't think so. This is the sort of thing that needs a "...you may pay 1. If you do..." in there. Also, adding all those identical-stat token types seems a little silly just for the common dual land cycle.
What are each guild's most definitive non-Human tribes?
It's a trick question! One of the cool things about Ravnica is that the guilds can supercede previous allegiances - it's an ongoing theme. From Boros Recruit on.
Though you could at least be more clear about categories. Some already mentioned that it's sensible to take into account characteristic and iconic races, but you also mix in classes, which I think is something that should be taken in in addition to races, but IMO you could have one of each for every guild. I personally often add a fourth consideration for most baic creature types which would appear in tokens etc.
On individual choices: I think Simic is easily the worst match, because Beast really is just so generic compared with Ooze - which is so emblematic of the guild that even a noncreature spell of the guild is technically a shortlived one. The whole original Rav-block mechanic graft is about the guild members carrying around with them what basically is ooze themed +1/+1 counters.

As for lands: Khalni Garden with a second color would possibly be fine, but Khalni Garden that can kill the opponent by itself is probably too much, especially in common. I could imagine a manlands with one hybrid mana activation for a 1/1 instead, however it doesn't sound very common to me still.
