Quilled Mastiff doesn't work as you want it to (I don't think). If it gets dealt lethal damage, it still dies before it can pump itself. You'll need "If Quilled Mastiff would be dealt damage, it gets +2/+2 until end of turn." which in turn... just makes it Bushido, really. Good but not really that amazing.
Parasitic Encroachment probably wants to be one trigger - "At the beginning of each upkeep, put a -1/-1 counter on enchanted creature, then put a 1/1 green Saproling creature token onto the battlefield for each -1/-1 counter on it." It's fair, but weird removal.
Spirit of Demeter sucks. Nobody's going to counter a seven mana 7/7, especially not if it'll end up untapping all your lands anyway. Then, paying seven mana to untap all forests you control also sucks. Make it worth countering and it might be okay.

Quilled Mastiff - Plays well with Caltrops, but otherwise potentially confusing. Needs some kind of reminder text like Fungusaur. (The damage is dealt before it gets bigger.)
Parasitic Encroachment - Decent removal for green. It doesn't need to be a token for each counter. A simple single -1/-1 counter and 1/1 token would be a better looking design. "At the beginning of your upkeep, put a -1/-1 counter on enchanted creature and put a 1/1 green Saproling creature token onto the battlefield."
Spirit of Demeter - For a vanilla 7/7 creature, I wonder if this could just be "When you cast CARDNAME, untap all [Forests/lands?] you control."
