My girlfriend isn't into any tongue kissing, hasn't been in the 3 years we have been dating. We still kiss open-mouth but without tongue. Is this how lovers usually kiss? Or is the tongue the normal?

Sing lustily and with good courage.
Be aware of singing as if you were half dead,
or half asleep:
but lift your voice with strength.
Be no more afraid of your voice now,
nor more ashamed of its being heard,
than when you sang the songs of Satan.
If its been 3 years then its just that both of you have found a comfortable place inside yourselves for showing affection. Not everyone uses tongue when they make out you know!
It is pretty strange but I dated for a short time a germaphobe who worried about tongue kissing. That didn't last too long, partly because tongue kissing is great and partly because germaphobes are a real hassle.

CAMILLA: You, sir, should unmask.
STRANGER: Indeed?
CASSILDA: Indeed it's time. We all have laid aside disguise but you.
STRANGER: I wear no mask.
CAMILLA: (Terrified, aside to Cassilda.) No mask? No mask!

My ex always drank from my straw when we shared pop and he used to love pointing out that our tongues had been touching 5 minutes ago so why worry about germs.

That's right, part of the many applications of the tongue, germaphobes need not apply haha.

Kissing ability, technique and preference is very variable. I mean, no one gets any formal training in this stuff, you're just expected to know how to kiss, assuming you're even interested in it.
As long as you and your girlfriend are happy, I don't think it matters that you don't use tongue.
Edit: For what it's worth, my partner and I do use tongue, but I've kissed plenty of people that didn't and some that used tongue way too forcefully.
I'm a little confused by the mechanics of open mouth kissing without tongue. Like what do you do with your tongue? Try to avoid touching the other person's tongue?
Some people are just weird about stuff. Tongue is fairly normal, but that doesn't mean not wanting to use it is wrong, just different. From what you've already told us about your girlfriend, she sounds pretty awesome already, so I'd let this one go.

It's perfectly reasonable to not French kiss.
If you'd like to use tongue or try it, perhaps it run it by her? If she doesn't like it or it's not a routine nonissue thing for her, don't worry about it and don't pressure her about it. She sounds like a keeper.

I am also curious about this. I'm getting a visual of 2 people with their mouths open just kinda bashing them together...
Response to the OP, I think normal is a relative term and societal 'norms' shouldn't dictate how your relationship progresses. If you're both happy, keep doing what you're doing.

Well, when you're pecking, your lips should lock but tongues don't need to touch. You can suck in your tongue and push out your lips if that helps as well as nibble or even bite. (Is this kosher for the kids here?)
On the second para here, I agree, if I don't altogether offer the antithesis that there is no such thing as normal. I have no dissent about do whatever feels natural or good.

I always assumed that pecking was inherently close-mouthed. Biting and nibbling make a little bit of sense, I suppose. Idk, I guess because I've always used tongue in open mouthed kisses, I don't understand the mechanics of not doing so. Or the point, for that matter. To each his/her own, I suppose.

You're missing out! I suppose most pecks are close-mouthed, but you can do open-mouth ones too.
Although there are potentially and actually less hygienic things than French kissing, I am rather repulsed by the act and concept of French kissing. That having been said, there are established health benefits for the act.
From a biological perspective, kissing, especially with the use of tongues, can trigger the release of oxytocin and dopamine – hormones associated with bonding and pleasure. This biological response contributes to the overall positive experience of tongue kissing.
