I've never really gotten into anime before but a coworker of mine has gotten me on this anime kick. Now I'm looking for more to watch.
I tend to be pretty picky with what I like but I'm looking for more anime to watch. The only medium that I would use to watch is netflix since I don't really care for streaming on the PC.
Not really sure what to look for or what genres are out there but some of the things that I enjoyed were
Full Metal Alchemist (both the regular one and brotherhood, though I enjoyed the first one better)
Samurai Champloo (absolutely loved this one)
Trigun
Elfen leid (a bit sappy for me but it was still cool)
Darker than Black. Modern setting, freaky powers, government conspiracies. There are a couple of early filler episodes, but this is one of my favorite anime series of all time.

I wouldn't go on netflix for anime, I'd look for stuff online. But if you're stuck there, the only ones I even remember are Darker than Black (YMMV, I found is incredibly boring and bland, but I've heard of people liking it), Afro Samurai (I have seen it but not on netflix, not sure if it's the same episodes, it's pretty gorey but doesn't really have a plot). Soul Eater seemed interesting. FMA you've seen. Baccano! I don't remember seeing there, but I do have a note on my desk telling me to watch it, so I must have found something about it interesting within the past two months.
I only used Netflix as an outlet for a little bit, the choices are pretty slim, yeah.
I'll echo the sentiments of those suggesting Afro Samurai, Soul Eater and Darker than Black.
If you loved Champloo (one of the favorite all time), you'll definitely enjoy Afro Samurai. It's a bit darker than Champloo, well a lot darker and the plot/character development isn't exactly their, but the action is frikin sweet.
Also, watch Gurren Lagen. At first you'll think it's cheesy, hell it's a parody of mech animes, but I was really drawn into it. I don't even like mech animes.
If any come to mind I'll be sure to come back here but I recently cancelled Netflix so I can search them myself.

Baki the Grappler - Bout a son trying to surpass his father at fighting. Kinda over the top fighting but its bloody and awesome...i call this one a Manime
Fairy Tail - This one combines wizards and humor. I am absolutely in love with Fairy Tail. a must watch for any anime fan
Soul Eater - Just watch it, its awesome. The moon drips blood...what more do you want? lol
Deadman Wonderland - A kid gets convicted for "killing his classmates" which he didnt do. Now he is at a prison and is forced to fight people Gladiator Style. Very short anime, but very, very good.
Sword Art Online - Nervegear is a type of VR they use for an VRMMORPG. Thats all i'm going to say, but its amazing. The story jumps a lot, but if you keep up, you'll love it.
C - Control : The Money of Soul and Possibility - This anime is short, but its very very good. Cant really describe it, but its about a kid who has a bank that makes you fight for money. Look into it, its amazing trust me.
Fate/Zero - This anime is a amazing. Just watch it, to much to explane
Fate/Stay Night - Same series, just watch it.
Another - This anime is very Mysterious and is a Thriller. Its about a class of children who are dying one by one. Its definitely a must watch.
Death Note - Same as above only this guy has a notebook that can kill people. Definitely a must watch
Attack on Titan - Just started not that long ago but its very intense and amazing. Watch it...you wont be disappointed
Date A Live - This one isnt typical of me to watch, but its about a kid in high school having to seduce these "spirits" and get them to stop destroying the world. It combines action and humor. Its pretty good. Watch it
BTOOOOOM!! - This anime is awesome. A kid who is a master at this video game gets kidnapped and put into a real life situation of the game. Pretty intense
Accel World - This one is made by the people who made Sword Art Online. Its about a kid who has no friends in school but he is a master gamer. He gets invited to play a new game which is different than what he is used to. Watch it, doesnt disappoint.
Air Gear - About a kid who uses these new form of roller blades with rockets on them to battle other teams for territory. pretty good, great music. watch it
Guilty Crown - Just started watching this one myself, but so far its action packed and awesome. Watch it, it wont disappoint.
Highschool of the Dead - Zombie killin and girls with Tig-Oh-Bitties. lol, watch it, its bloody and manly
A Certain Magical Index - This anime is about both Magic and Science. Science has learned how to give people powers. A guy meets a Nun, etc etc. Its hilarious, and pretty action packed. Watch it
thats all i got for right now i'll add to the list later. Some of these you are going to have to look up online, but trust me, its worth it

That should be enough titles. You might not be able to find them all on NetFlix since some are still far from being translated or even licensed in the States, in the Canada or in France (the big three for out of Asia anime consumption). You might eventually be tempted by screening the net for those animes, most of those can be found in either streaming or torrent (I'm not going to do the nice guy and give you links for those, would be kind of illegal to post them here, might send you a PM if you are interested in torrents). I suggest trying to find torrents from sub teams (those that take the animes, translate the dialogues and add subtitles, then redistribute for free), if you are interested in filling your hard drive with animes. And I also suggest you to make your own mind about each animes by reading titles and synopsis and checking the graphic style (some animes have really bad art, like some mangas do).
Find your anime style (I'm an heroic fantasy, fantasy, mystery, comedy/serious style while my aunt is a Tokusatsu (super heroes with giant robots like Power Ranger) style) and you will find what you like as an anime faster. There are many sub styles (like Romance, harem, ecchi and many mores) as well as many styles (Heroic Fantasy and fantasy, just to name two) divided in 4 big categories (Seinen: young adult 16+ like Elfen Lied, Shônen: male teenagers 12/13+ like Naruto and Bleach, Shôjo: female teenagers like Sailor Moon and Jôsei: mature women. You can watch of any category, they are just to target the audience in a faster way).
And lastly, here's a link for you, where you will have the opportunity to find animes that might interest you, one of the biggest database: My Anime List. Now, here is what you will find more interesting, just click on the anime titles and the database name, I linked them directly by adding the URL manually to them, which means I just wrote this reply for around half an hour. Found out there's a good anime on Netflix that you must try watching (found out via their website) Koukaku no Regios, which is translated in Chrome Shelled Regios. And if you are into martial art animes, I suggest Kenichi the mightiest disciple. Both of those are on Netflix. As well as Chobits. I sure hope that those 18 titles I see in their selection aren't the only titles.

Crunchyroll is anime online for free. The problem is that it does have ads unless you opt for their paid service. I think its about 7 a month.
They easily have over 100 anime series free to watch. (Im being conservative too)
But its free, and the selection is far vaster than netflix.
At any rate, for awhile I watched on both netflix and crunchyroll. Then as my tastes wandered more into anime, I stopped netflix. Now between magic, anime on crunchyroll, and watching episodes of current TV online, that's about it for the free time.
Violet Evergarden is a must watch. The animation, the music, the story and the emotions that it has is absolutely stunning. Gurren Lagann is alsogreat if you even remotely like mecha anime.

I recommend Shiki (Vampire horror, yes horror, no romance), Darker than Black (modern si-fi, cool powers), Phantom: Requium for the Phantom (psychological, action, somewhat si-fi, subs are better than dubs), Code Geass (Mech, psychological, rebelion) (Season 2)
