Solar Fake covers a song every album. I like their version of Creep by Radiohead better than the original, though that's probably an unpopular opinion. It's real close for Such a Shame by Talk Talk, but the Solar Fake version feels a lot more modern. And on their latest album, they covered One Step Closer by Linkin Park, and it's terrific. As someone who listened to LP before I developed a taste in music, it's nice to hear something that gives me that nostalgia blast without the shame of having to actually listen to Linkin park.

Periphery did an excellent cover of Metallica's "One". It took all the things I hate about Metallica and got rid of it for a song that's more than tolerable.

Chiodos covered Paradise by Coldplay. The original song is horrendous in my opinion, but the cover is brilliant.
Miranda Sex Garden's cover of Exit Music for a Film is equal to the original.
Zug Izland's cover of Cry Little Sister is arguably better than the original. GWAR's cover of School's Out makes me think of that episode of Soul Eater where Lord Death flipped the city.

Deftones cover of The Cars "Drive", Flyleafs cover of U2's "Stay", Supervillians cover of Whams "Careless Whisper", and while I wouldnt call it better, Corey Taylor & Aaron Lewis cover of Pink Floyds "Comfortably Numb" is really good.
Saw a solo performance by Chris Cornell a couple months back. During his set, he did a cover of 'One' by Metallica, but sung to the tune of 'One' by U2. Sounded like a weird mix when he was introducing it, but it turned out to be really cool.

The one that I always think of is Joe Cocker's cover of Little Help from my Friends by the Beatles. I'm a huge Beatles fan, but I cannot get over Joe's vocals, I just love them. It helps that the style is quite different from the original too.
There's this guy Scott Bradlee who has a band that does old school covers and they're really awesome! My favorites are We Can't Stop and Sweet Child O'Mine.
