Soarin', in Epcot. Just... see it for yourself.
The GE Test Track, in Epcot. Fastest ride in the park.
Space Mountain, in the Magic Kingdom. I personally don't like it that much, but it's an icon.
Big Thunder Mountain, in the Magic Kingdom. My preferred Magic Kingdom coaster.
Expedition Everest, in the Animal Kingdom. If you can get a seat near the front, there's an incredible view at the top.
And I never got over to it, but the Rock 'n' Roller Coaster (starring Aerosmith) in Hollywood Studios is supposed to be really good too.
No coaster in the park is particularly intense by the standards of, say, Busch Gardens or Six Flags.
Shows and Attractions:
The Main Street Electrical Parade, in the Magic Kingdom. Literally the original show from the '70s; awesomely retro.
Random cultural stuff that happens in the pavilions at Epcot. Just keep an eye and an ear out, and you'll find all kinds of interesting things to watch.
Food:
Les Chefs de France, in Epcot (French pavilion). Casual French bistro. They serve a mean cheese platter.
Rose & Crown Pub, in Epcot (British pavilion). Great fish and steaks. Another mean cheese platter. ...I like cheeses.
Le Cellier, in Epcot (Canadian pavilion). Excellent steakhouse. Also have pretzel breadsticks, which, Canada, is one of the greatest ideas ever.
Make meal reservations beforehand.
And be on the lookout for Remy the rat.

If you go to Epcot, they have Mission Space, or whatever it's called. That's the ride that killed people. Of course, it's not the rides fault. The people didn't know they had a heart condition when they went on it.
If you have a chance, I would also check out Downtown Disney. They have the House of Blues, Cirque Du Soleil's La Nouba and Disney Quest. Check the HoB website for shows that may be coming up, you just never know. La Nouba is Cirque's residential show. It's really cool. And Disney Quest is a 5 story building that is all games all the time. Mostly video games, but there are a couple of other games. Of course, if you don't visit often, I would make this the lowest priority.
Personally, I would choose Universal Studios over Disney, but I am biased since I am a Passholder there and have been for the past 5 years.
I would go to epcot they have a lot of cool things there.
you also have seaworld around the corner if you have kids that is fun.
I highly recommend universal and islands of adventure. if you are wanting high thriller rides and stuff that is the place to go.

This is a blast. although studios other than the revamped star wars ride doesn't have much.
Yea universal has a leg up on disney mostly because they keep adding new and revamped stuff. the addition of the harry potter section has only upped the traffic.
also i highly suggest even if it does cost a bit more to get the express pass. you will not regret it. going 2 or 3 times on some rides while other people wait to get one.

Magic Kingdom:
-Splash Mountain
-Space Mountain
-Haunted Mansion
-Pirates of the Carribean (both this and Haunted Mansion are great for the charm of the "old Disney world" experience).
-
Hollywood Studios:
-Tower of Terror (Fastpass if can, huge lines)
-Rock N' Roller Coaster (Fastpass ASAP, lines are insane). You accelerate from 0 to 80mph in like 1 second, it's a completely unique sensation. Glow in the dark visuals for the rest of the coaster makes it really fun and intense.
-I forget the name of the restaurant, but for lunch MAKE A RESERVATION and go to the 50's drive in movie diner theme place. It's the best thing ever.
-The muppet 3D movie is kind of fun. The Walt Disney museum was pretty neat to see too.
Epcot:
-Soarin' is amazing. Get a fastpass for it though because the lines are gigantic.
-The Space simulation is fantastic (expedition space I think it's called?) if you've got the stomach for an extreme gforce sensation on the launch.
-The history of technology thing inside the giant geodesic dome is kinda neat too.
-Ellen's energy adventure is kinda neat.
Animal Kingdom:
-The yeti roller coaster is awesome. Must-ride. (fastpass it)
-The Lion King show was really good.
-The animal safari tour or whatever it's called was really interesting - lots of rare animals to see (although it had some corny narrative tacked onto it in a few places).
Stay at the Grand Floridian if you can too, it's amazing.
I've been to Disney and Universal and all that jazz more times people have pestered about reprinting Tarmagoyf and must say the greatest fun is at Pirate's Cove Mini-Golf.
It was prolly the best vacation i ever went on ;D i stayed in the Grand Floridan for a week and spent a day at each park. Im prolly goin again either this summer or next summer.

Disney World itself is the best place ever. So many amazing things to do there... so many memories. I've spent more time there than you could fathom.

Beach Club (Or was it Yacht?) has just an absolutely incredible pool. My family poolhops (go to the pools of other hotels, essentially not allowed) when we go to Disney and we managed to get into Y/B Club's pool... and it was just insane.
But Coronado Springs has the best pool, and is my absolute favorite middle-of-the-price-chart hotel.

Am I allowed to complain about your standards and say that Cedar Point should be the standard for roller coasters (or, for a lower bar but still high: any of the other Cedar Fair parks).
In the US, Cedar Point is far and away the best coaster park.
As for the OP: Honestly, I wasn't a big fan of anything at Disney with the exception of Epcot. Epcot had (has? it's been a LONG while) all the cool sciency stuff, plus it was significantly less crowded. Rides wise, Disney does great with the atmosphere and setting of all the rides, but the rides them selves are pretty generic... Not too disimilar from their movies to be honest.
Disney has designed itself to be for an entire family. they have a great buisness model. Parents bring kids there, kids grow and go to thrill parks with bigger and badder rides, kids have kids of their own and become parents, reapeat.
I myself cannot do the big coasters. Ceader Point is the premier coaster park in the country, but I couldn't do much there. So go and enjoy, we go at least once a month. I have milked my annual pass like you wouldn't beleive. We go for every special occasion. Go in October for the Food & Wine festival, it is expensive but great with great weather and low crowds.
Spend your entire stay there riding the Teacups. It will give you the privilege of telling people that you spent thousands of dollars to ride the Teacups for an entire weekend. That alone is worth the price of admission.

okay not necessarily all of them, but
Magic Kingdom: Space Mountain, Big Thunder Mountain Railroad, Splash Mountain, Pirates (more atmosphere than fun), FIREWORKS at night!! (and Electrical parade)
Epcot: Soarin', Test Track, ALL the countries! (except USA. That one's boring lol.)
