So as a commander player I play a lot of swingy commanders, I play Hapatra Vizier of poisons that makes a ton of tokens and turns them sideways, Depala Pilot Exemplar that makes really big vehicles and swings them in for big dumb vehicles, Etalia looks for a big dumb steal your stuff, Mimeoplasm is big dumb infect, and a few others. So my current playgroup got tired, over overruns, triump of the hordes, and craterhoofs, and they challenged me with making a creature less, maybe a few mana dorks or utility creatures. What are your guy's recommendations? I want it too have multiple win cons and be really fun.
You could always make them regret that challenge. Artifact ramp into Narset, Enlightened Master, use Proteus Staff on her, put Omniscience, Enter the Infinite and a pair of counterspells on top then attack with Narset(using whatever form of haste you want or have) and then storm off with your entire deck in hand and free to cast.
For creatureless, Izzet or mono-Blue can be powerful choices since you can spell-sling your way to victory or use combos in the deck. Talrand, Sky Summoner and The Locust God encourage these sorts of plays and can also set up a Proteus Staff combo with the tokens they make.
If you want an off-the-wall creatureless deck instead of spellslinger: Geth, Lord of the Vault. You steal creatures out of their graveyards and make your boardstate from opponent's resources, mainly using big mana in yours to fuel it. It makes every game play differently and a bit of mill and artifact destruction will go a long ways in this. The Scarab God can play a similar game but doesn't fuel the graveyards as well as Geth can once he gets going.
But seriously, it depends on how competitive you want to go. Oviya Pashiri, Sage Lifecrafter could be a fun monogreen artifacts deck, or you could just go hardline Teferi combo-control (or hardline Teferi combo-control).
Boardwipe creatures like Ashling the Pilgrim or Kagemaro, First to Suffer become more fun when you're not wiping your own dudes, and they help keep the constant threat of creatures at bay.
My favourite EDH deck is a nearly creaturelss Dralnu, Lich Lord. It can win without attacking by casting Torment of Hailfire or Exsanguinate multiple times. That said the small number of creatures in the deck has always included something capable of swinging for the win (currently Ulamog, the Ceaseless Hunger) so I maybe it's not quite pure enough.

Seconding Dralnu, Lich Lord. People are afraid to run him on account of his first ability, but it's very rarely, if ever, relevant. He's a lot of fun to play, super controlly with a few key creatures to reanimate. Plenty of avenues to dominate and he constantly gets underestimated, so get ready to be the dark horse at the table. Similar to Kess, Dissident Mage but with a little more flexibility in his ability.
Taigam, Ojutai Master certainly pushes a deck in a creatureless direction -- the obvious direction being extra turns. Extra turns are great, but you've gotta have something to do with them. I think superfriends is a decent option for remaining creatureless while abusing extra turns. I didn't go creatureless, only creature-lite, packing a fair amount of creatures and enchantments that produce tokens or otherwise offer rewards for casting instants/sorceries/noncreatures.

Oloro, Ageless Ascetic with no creatures in the deck. You could focus on control with big spells, combine Approach of the Second Sun with black and blue's tutor power, go enchantment control, Esper Superfriends or, if that's your thing, some sort of ifinite combo. With Oloro gaining you life each turn, at least your commander actualyl does something for you while you can just never play it (for the 100% creatureless experience).
