My decks I strive to always have at least 36 lands, 37 perferred. At rock bottom, 34, but only with a lot of either ritual magic for accel, cheap fetching, or a rediculously low mana curve and draw power. However, of those 36/37, I normally only use 6 as colorless utility lands.
One thing though, I don't consider Vesuva or Thesbian's Stage as colorless utility though, as 95% of the time the land copied will make color of some sort. I do however count Cabal Coffers (except in mono black) because without setup, it has a pretty good chance to be a dead draw, and is flat useless before turn 4 most times.
How many do you all run? 7 is my personal max, and thats only because Urborg, Tomb of Yawgmoth is a popular target for my tutors, having Wrexial, the Risen Deep as my commander for that deck.
I am pretty sure my Glissa deck has that many and it seems like a ton compared to my other decks. Although my deck is half colourless so it isn't causing mana problems.
for wrexial, getting at least UU on board is a challenge to me early game. B is normally never an issue, as I have more nonbasics that tap for B than I do U. (Bojuka Bog, Urborg, Tomb of Yawgmoth, Crypt of Agadeem) and slightly more basic swamps than islands, so I don't want my # to be too high and risk early mana problems. Once I get fetches, this won't be as big of an issue, but for now the problem still remains.
Two or three in most decks, especially in multicolor decks. I run six in Azami, and I've occasionally found myself hurting for blue mana sources. I run 14 in Azusa, but that's Azusa.
It's incredibly deck-specific; in Teneb I have three and would have to seriously consider adding another, in Jor Kadeen I have eleven and could easily make room for more. Having hard guidelines like this is pretty worthless, IMO.
I've been having problems with this in my Borbor deck, drawing a starting hand with 4 colorless lands is problematic to say the least. It's a land heavy deck but its still shaky.

On topic: In my Ghave deck I run 6, 5 if you don't count Deserted Temple and 7 if you count Thawing Glaciers. (Sexy foil version. I recommend it highly even for the massive 5x price jump.)

2 in Thrun, Maze of Ith and The Tabernacle at Pendrell Vale. I wanted to go all in and get Island of Wak-Wak in there but found that during a proxy session I had difficulty repeating :symg::symg: in the early turns to get Thrun out asap so I opted against the inclusion in the end.

Personally the max for me is 6 and that feels like stretching it, and I always run at least 38 lands in my deck if not 39-40. It really depends on how many colors you are running in that specific deck.
I still consider Vesuva and Thespians stage colorless utility because if they are in your opening hand they are crappy. If it doesn't come in and tap for colors immediately, I consider it utility (unless its a CiPT land of course).
Does anyone else make a note not to count Maze of Ith when figuring out how many land you want in your deck?

Yeah I can't really count Maze or Eye of Ugin since they don't produce mana.
The Mimeoplasm runs 5, plus a couple colored ones, and has a sweet land toolbox
Mayael only runs 2, but there are a few more that I could add to improve it
Lazav runs 3, but it's a super budget deck and also heavily focused on mill
Sydri runs 8, but that is a very artifact heavy deck so I can afford more colorless
So I would say on average, if I fully tuned a deck, I would probably be around 5-6 in most cases, but it obviously varies a bit based on the deck.
