Q: If I control Humility and my opponent casts Meddling Mage anyway, does he get to name a card? Will it ever do anything?
A: He does get to name a card. Replacement effects, such as that of Meddling Mage, apply before it actually moves, when it still has the ability. With a card named, that card will be unplayable once Humility's gone or if the card's name is Chimney Imp.
Even though it is always a good idea to bash Chimney Imp, it makes the answer somewhat... confusing. I actually looked up the card to see how it interacts with Meddling Mage/Humility.
Why is the card unplayable as long as Meddling Mage is on the table? I understand that you get to name a card, as that is a replacement effect. The "The named card can't be cast."-Part seems to be pretty continous for me. Why doesn't Humility steals this ability? Does it get applied beforehand? If so, then where and why?

Humility does steal the ability. i think you may have read the answer wrong.

Whilst the above doesn't specfically state with the bolded section it does imply that whilst humility is on the battlefield you can cast the named spell.

Well now wait just a second on that Persecutor question. If the Persecutor's owner and controller (assuming that to be the same person) loses as a result of another player getting to "you win", doesn't that remove the Persecutor from the game and with it the other players' inability to lose? Would they not then lose as well? Does it make a difference if the "you win" comes from Coalition Victory, Darksteel Reactor, or (say) Battle of Wits?
It shouldnt. Consider that the "You Win" clause is a one time shot. So, everything that can happen will happen. So, "You Win" goes off, and does as much as possible. Basically, only causing the player controlling the AP to lose, since no one else can win. By the time the AP is gone due to the player losing, the "You Win" card has already been resolved and is probably in the GY.
It's a lot like the Indestructibility enchantment on a creature, and a Wrath of God deal.
W may only be paid with white mana. U may only be paid with blue mana. B may only be paid with black mana. R may only be paid with red mana. G may only be paid with green mana. C may only be paid with colorless mana. 1 may be paid with white, blue, black, red, green, or clolorless mana.
Say I beat someone up with an Abyssal Persecutor until they have negative life, and then cast Warp World. Do I have to worry about flipping up another Persecutor, or is the moment I shuffle my permanents into the deck all I need to win the game?
You would need to worry about hitting an AP again, since SBAs only get checked before anyone gets priority, and no one would gain priority while a spell is in the process of resolving.

That covers Coalition Victory, but the other two cases don't involve any cards resolving or going to the GY so that analysis doesn't apply. In fact I was pretty certain the Darksteel Reactor win condition would still work since there's no restrictions on when it's checked. The real question was whether the Battle of Wits type "at the beginning of your upkeep" would still work at that point or is it "too late" and you have to wait for the next upkeep.
For Battle of Wits, you would end up winning the game on the next upkeep. On the first upkeep, it would do as much as it could (making the AP player lose), and then the trigger would be gone until your next upkeep, where it would trigger again, and provided that you still do have 200 cards in your library, you will win.
As for Darksteel Reactor, you would make everyone else lose almost immediately. Since there isnt a specific time trigger other than the charge counters, it will continuously try to make you win the game. So, you will "win", causing the AP player to lose, and the AP going away, and the Reactor would go off again once the AP player is gone, causing you to actually win the game. This is something like the Dark Depths thing, where if you try to stifle the Marit Liege token, it will just trigger again anyway.

Sure, some spells won't have an effect without all of its legal targets, but those are rare and strange.
