All three of those colors share the Giant creature type (one of my favorites). There're a lot of elementals, spirits, and avatars with those colors, too.
White has the kithkin, cats, birds, some elephants, and angels.
I'm not sure if all these are sentient, but black has zombies, horrors, demons, ogres, skeletons, and vampires.
Red has minotaur, goblins, viashino, and dragons.
That's all I can think of, off the top of my head, and I'm pretty sure most of them have had some cards or characters that act intelligently.
Kor are these weird blue skinned people with stretched faces and ears from the Tempest block. They were one of the peoples that lived in the artificial plane of Rath. Their original cards didn't have shadow, which is weird, because every new creature in Time Spiral that had the Kor creature type did. I don't know where that came from. Their old thing was moving damage from themselves to other creatures you controlled for free (like Nomads en-Kor, Warrior en-Kor, and Lancers en-Kor).

Cool. I didn't know that. I actually wasn't playing Magic when the Kor, Dal and Vec creatures came about. The only way I've learned anything about magic storylines (other than by reading flavor texts) is by listening to what my friends tell me.

It's not really an obscure reference when you point it out yourself, and when it's from a fairly popular TV show.
I've always been a huge fan of non-generic races. You can only make so many Goblins before you get sick of them. That's why I love Loxodon and Vedalken so much... Anthropomorphic elephants aren't exactly something that's common in the fantasy genre.
Make a race yourself, it just makes your set that much more interesting.

Really you can make anything sentient in Magic. And you can never have too many humans.

Make one up. Take some animal that you can anthropomorph, look up its latin name or some other name, and make up a name for a race.
Alternatively, just mess around with the human species, like with Vedalken, Kithkin, and Kor.
