SCG Opens are Competitive events; so expect to see real decks pretty much every single round. I played UW Humans myself at my last one and faced 4 Zombies, 1 Tempered Steel, 1 Spirits, 1 RG Aggro, 1 UB Control, 1 Delver, and 1 Humans. I'm just saying this because I know you made a thread complaining about people beating you with money, but money is not an issue when you are trying to win a tournament.
Not only that, it is a competitive REL tournament; you are expected to follow the rules. Do not comment on games that you are railbirding, make sure that you maintain proper board state, etc.
Oh, and watch your stuff. I have had 2 friends get their stuff stolen at these events, which is always just the worst.
Wear comfortable clothing. Take a shower beforehand. Bring water and snacks because the convention center will charge you up the nose. If Hannah from hannahalters.com is there, she's really sweet and will do any kind of alter you want. Don't bring your collection with you, just bring the decks you want to play.

This is possibly the big one checking the SCG site you will be competing for a share of a $14,000 prize pool, what may fly at a regular level event like a FNM/prerelease is not going to cut it here.
Be very precise in how you communicate with your opponent and try to insist on the same precision back from them, especially now life total changes have to be acknowledged by both players.
The instant something feels off get a judge over particularly for rules questions whilst your opponent can't lie he does not have to tell the full truth. Worst case scenario you feel a little foolish and get a time extention on the match best case you save a game/match you could have punted based on faulty information.
If you haven't already go to the DCI document center and get yourself a copy of the Magic Tournament rules, comp rules and the Infraction procedure guide. Atleast skim the first and last but the comp rules is to weighty to go trough in one sitting but I would read it before your next competive level event.

Oh I am fully aware that I will be playing against hundreds and hundreds of dollars. But my logic is if I'm playin comp at fnm to be the very best, like no one ever was, I'll have to try out an open.

If something doesn't make sense, call a judge. If you have a question, call a judge. If there are any problems, call a judge. Don't try to fix things if something goes wrong. When talking to a judge never lie.
Keep track of life totals with pen and paper. Don't use dice. Make sure your handwriting is legible. Whenever a life total changes (yours or your opponent's), make a note explaining why. For example, if your life total goes down to 19 on turn two because your opponent connected with a Stromkirk Noble, you could write "19 SN." That way you, and also a judge if they have to get called in, can reconstruct exactly how everyone got to their current life totals. This can save a lot of headaches if you and your opponent get mixed up on who is at what life (this definitely can happen) and it will help you keep track of the game state.

Griselbrand is pretty straightforward (in the same way that a nuclear holocaust is straightforward); just draw some cards, beat some face, bathe in the blood of some innocent, and repeat.
I was just at SCG Des Moines, so I can help you with a few pointers. Bring snacks and a drink, seriously you will have no time or little time to eat or drink. Pack light, if you are not going to play legacy, don't bring your legacy stuff. Shower and get a good sleep in, it's going to be a long day, if you don't plan on dropping and going to the end, it's a 10+ hr day. Pen and pad, communicate with the person you are playing against. Play at good pace and most of all, have fun!! There will be some jerks there, but very few, but they do exist.

I can tell you now. Your going to have a rough day. Every opponent will fully understand every nuance of the rules, if you need to brush up try playing magic online.
Basically you can cast instants whenever you have priority, at the end of your opponents turn is the usual time they are fired off.
Judges are your best friend, if you need one call for one. If your opponent doesn't show for the round, call a judge. If something seems off, call a judge. At the end of the day the judges are there for your benefit and except to be called, especially if it involves possible cheating. Also bring your own drinks and snacks. I want to the open in Cincinnati a few months back and by the time I left Saturday Saturday night, the vending machine of 20oz's that was see through, was almost completely empty (this was around 8:45pm), it was full that morning. The other machine was totally empty and the snack machine was also very close. This stuff was between $1-2 a piece depending on what you were getting. The snack place that was in the convention center itself had pizza $4.50-$5 a slice. Everything else was about the same price. Needless to say I'm happy I brought my own snackage. Also don't bring anything you won't be using that day, as it's much less likely that your stuff will be stolen, but from what I've heard the SCG Open now give out bands for players to put on there bags and wrists to prevent theft. Also there are quite a few people that like to come just to trade, so if your looking for anything specific, your most likely find it either on the trade floor or at the dealer table.
FTI I'm going to SCG Phoenix.
