I would agree that ethersworn cannonist would probably be your best bet, just SB it in it ruins their combo.

The best cards in a purely Esper Aggro deck aside from Ethersworn Canonist are probably:
Infest
Sleep
Hallowed Burial
Scourglass
None of those are very good options since they are so slow, but it's tough to kill Elves! without Red.
Deathmark and other removal spells going for the heritage druids and elvish archdruids usually can slow the deck down to the point that they can only go off much later if at all, but it also depends on their build.

As so many others have said, Canonists. (I know, you don't like that answer)
However, Tidehollow Scullers, Infests, and even a well-timed Doom Blade can set an Elves player back a full two turns if he chose to keep a slightly substandard hand. Infests are particularly effective (unless they play Coat of Arms early enough, of course).
Other options are Angelsongs and other "Fog" effects (Batwing Brume can reverse games instantly) that can keep his alpha strikes nullified long enough for you to swing in for the win. You have to expect that at some point, you're going to be 4+ lands on top going into your next turn before he tries to finish you, so a way to shuffle at will can really blunt his "assured" win. Ethersworn Shieldmage may not prevent damage to you, but it can ruin his Windstorm plans.
If you want to splash, Volcanic Fallout can be amazing. Instant-speed-murder-all-elves-in-reponse-to-Regal Force? Yes please. Even the humble Deathmark can put you ahead and keep you ahead, and you don't have to splash at all.
Mostly, though, you're going to be playing cat-and-mouse in your Sideboarding. Put in Canonists, then sideboard to protect them from artifact removal in Game 3.
1 month ago, I destroyed a Combo Elves player in the top 8 with my BG Elves. How you ask? I had 4 maindeck Maelstrom Pulse and 4 maindeck Thoughtseize. I sided 4 Infest and 4 Deathmark (these helped the most) and really did overkill to him. He was stuck with 5 lands and 2 Regal Force the last game. It may be tougher with the Elvish Archdruid, but I still think that the combination of these 4 cards can destroy them.

It's a bad matchup for decks without red overall tough. It will probably be better once the new Wrath of God from Zendikar rotates in.
...I dont Think Elves! will be a problem in Standard when Zendikar hits anyway... But yeah, all the good choices have been chosen. Not much more to say.

Just watch with the canonist. It stops the Nettle Sentinel shenanigans, but Elvish Archdruids still are potent quickly. Any variant running token generators can also fight through the canonist well enough.
the only real key to winning combo elves I can think of is just holding back removal, and running things like Pithing Needle for their mosswort bridge, canonist to shut off their engine (until they path it, of course), and silence or lapse of certainty to buy turns.
e: to the above poster, it really depends on what they've got. if they have two nettles, a heritage, a couple lands and enough good stuff to really ball out then they can go off very very early into the game.
Take your monoblack deck, then set aside 14 swamps. Add 4 Creeping Tar Pits, 4 Darkslick Shores, 4 Drowned Catacombs, and 2 Jwar isle Refuge and add 4 Jace, the Mindsculptors. Your monoblack deck is instantly better. Better yet, drop those refuges, throw in some islands and some mana leaks, and lo and behold, you're now playing a real deck. Congratulations. Welcome to the world of competitive M:TG.

4 usually. Turn 3 can happen, but is unreliable. Later can happen, and removal helps it happen later, but even with spot removal, turn 4-5 is the sweet spot.

Other than that I'd say Infest,Zealous Persecution(not that great alone tough), Pollen Lullaby... you can always remove dangerous ones with Path to Exile.
