So I'm taking the challenge to watch all of One Piece from the very beginning. I've heard it's a great series to follow but there are over 600 episodes release + movies and OVAs. Is this true? Have I biten off more than I can chew?

Depends. How much time do you have/are willing to dump into this.
To put it in perspective, lets do some quick math. Every episode is at least 22 minutes, 600 episodes is 13,200 minutes which translates to 220 hours or almost 10 days of straight watching. Assuming you would stick to something more manageable like 6 hours a day (still a lot) that's up to 36 days and 4 extra hours. Your call

I work Mon - Fri, but I have about 6 hours of free time during those days plus the weekends. I'm thinking by your math if I dedicate myself to about 3 hours a day I can catch myself up within a few months.
I'm used to the lengthy series being an old school junkie, and something like One Piece appeals to me.
So, anyone hearing anything about Mobile Suit: Gundam Unicorn Episode 7 yet? I heard March/April 2014 at least, and there's rumored to be a new Mobile Armor styled after the Sinanju.

So I just started watching something on Netflix called Fairy Tail.
It seemed pretty silly at first and was heavy on the sexist humor. I was surprised how quickly I got drawn into it, though, when they actually got pretty serious.
I'm still not very far into it, but I'm hooked. I'm in the middle of the Galuna Island arc (I think the spelling on that is right).

Really? I'm having a blast right now through Season 1. I'm at the episode where Nami goes back to her home town and everybody is introduced to Arlong. Good series!
My fiance is making me watch Fullmetal Alchemist: Brotherhood. I saw the first series and I really wanted to watch this new one, but I'd always get bored about halfway through season 2 because a lot of it is retracing story beats from the first series. I'm going to try and give it a chance though. I'll see how I feel after season 3.

fairy tail is my favorite anime of all time. But i cant stand the dub
This season is shaping up to be pretty damn good. I think I'm watching 17 or so series and am thoroughly enjoying all of them.
Most exciting anime of the season so far is either Kill La Kill, Kyoukai no Kanata, or Kyousogiga.(Ippo and Kuoroko get honorable mentions but I know what happens, so it kills the anticipation a bit)
Most interesting as far as plot is concerned is Nagi no Asukara or Samurai Flamenco, while Kyousougiga and Kyoukai no Kanat also provide some interesting plot points to go along with the action.
Funniest is NouCome by a country mile. Kill La Kill and Golden time provide some solid laughs, but NouCome is just so damn funny. Laugh out loud through the entire first two episodes.
Edit: Samurai Flamenco is funny as hell.
I'm watching Kill La Kill right now, and right now I dislike it.
It's spastic and random along the lines of FLCL. If you want something FLCL-like then watch it, otherwise, pass.
You will eventually be bored. I know I was at around episode 200.
On a side note, just finished watching SAO and loved the anime. Need to find the next pearl now.
That's what bothers me about lengthy anime series, especially something as grandiose as One Piece. I'm currently at episode 40 I think and it seems fine so far...but I fear at a certain point it will have endless fluff and I will have to endure it until I get to the meat and bones of the storyline.
I've seen some spoilers for the more recent episodes and they look cool. Maybe I'll be able to endure it?
In any case another anime I'm watching is Hajime no Ippo. Not normally a fan of sports anime, but this series is really enthralling.
Hajime no Ippo is fantastic! Really not sure why people dislike sports anime so much. They are pretty much just regular shounen shows, and a lot of them are fantastic. All the sports series running this season are particularly solid.
@The guy who liked SAO: you should check out Log Horizon, I'm actually having a lot more fun with it then I did with SAO.
I thought One Outs was terrible and I agree that it wasn't sports.
From what I read about Giant Killing, it seems like that certainly qualifes as sports, at least as much as Big Windup does. And Big Windup was fantastic. Big windup is definently more Seinen then Shounen though. The shounen sports stuff is more like HnJ, KnB or Ace of Diamond. Special moves and stuff.

Last ep of Kill La Kill was incredibly good though.
