Real combos, please. With nearly half the people in this thread trying to be funny rather than posting actual legitimate content, it's getting awful close to just getting closed. No, you cannot do either of those. Your opponent decides when he attacks whether he is attacking you or one of your Planeswalkers(like Jace Beleren for example) and then his creatures are attacking the way he has decided them, you cannot choose to step in front of your Planeswalker or use them as a shield for yourself.
(Sorry, spelling Planeswalker wrong bothers me as "Plainswalk" is an ability, "Planeswalker" is the card type.)
if you have no monsters to block with and your attacked by a creature can you choose to block with a Planeswalkerer instead of taking the damage your self?

"Weaker" is not well defined in the scope of the Rules. A Wall of Stone is arguably weaker (It has less power) than Thorn Elemental, but it will survive blocking the Elemental just fine (because it has more Toughness than the Thorn Elemental's power).
If you choose to assign the damage as if the Elemental were unblocked, than the blocker will survive anyway, because no damage will be dealt to the blocker(s).

If a player were to play Firebreathing would he be able to use that ability for every mountain they tapped making it be say +6/+0? or can they only tap one mountain to add +1/+0.

At the beginning of each player's upkeep put a plague counter on traveling plague. Enchanted creature get's -1/-1 for each counter on traveling plague. When enchanted creature leaves play, that creatures controller returns traveling plague from it's owners graveyard to play.
When the enchanted creature leaves play does the card owner then play the card again on a new target or does the opponent get to select a target fro the spell?
