I assume that by "threat" you mean menace. I assume that by "raising" a creature you mean destroying a creature.
With these assumptions, the remaining blocking creature would still be blocking. Effects that restrict blocking (such as menace [C.R. 702.110b]) are relevant only at the moment blockers are declared as the declare blockers step begins (C.R. 509.1b-c), and not at any other time. Thus, removing one of the blocking creatures from the battlefield in this case would not remove the other from combat (C.R. 506.4a).

2) Damage to creatures does not trigger Hixus's ability. However, the usual order is this: combat damage happens, then state based actions clean up the game like destroying lethally damaged creatures and players with 0 or less life losing the game, then triggered ability waiting to go on the stack go on the stack. So if lethal combat damage was dealt to a creature and combat damage was dealt to the controller of Hixus, the creature is destroyed before Hixus's trigger makes it to the stack.
3) Hixus can exile blocking creatures only if they a) survived the combat damage, and b) somehow dealt damage to the defending player (like by having combat damage redirected). Each creature that deal combat damage to the player will get its own Hixus trigger and be exiled when it resolves.
3a) All combat damage is dealt simultaneously, and the creatures don't pull their punches. They all deal combat damage equal to their power, even if that means, that a mere 1/1 blocker (made able to block multiple creatures) is hit by three 100/100 creatures for a total of 300 damage. Hixus will not trigger for any of those because neither did combat damage to the player. -

Important to note here, that you have to cast Stifle-like effects, when the trigger of Champion is on the stack, meaning, you can't wait to see, which creature your opponent wants to put. -
