Basically, if a permanent you control leaves the battlefield, your revolt abilities will be active until the next time a player gets to untap.

Players are allowed to take short notes during the course of a game: you could easily (and legally) write down the names of those cards you were allowed to see while you controlled your opponent.
This is the very reason why they created rule 406.3 ( ''once a player is allowed to look...'' ): so you don't need to bother writing card names. Same result; less hassle.
..and your opponent is not allowed to try and fool you by shuffling the hidden cards: they must remain clearly identifiable (rule 406.4).

You're correct. All blockers are declared at once during the declare blockers step. In order for the Dreadnought to be a creature at that time, your opponent would have to tap the Titan before the declare blockers step. If he does, then the Titan will be tapped and unable to block.
If a spell such as Consume Spirit or Imperiosaur gains convoke or improvise, does the "spend only ___ mana to cast" prevent you from tapping artifacts/creatures to pay for it?
In addition, in 2HG, each creature attacking a team only deals combat damage to one of the two players. Your opponents can choose to deal their combat damage to your teammate in order to get around Gisela's prevention effect.
