Lets say you have a 360 cube and more than 8 people show up. How many extras do you think could draft before the process breaks down and starts to suck?
I figure in sanctioned booster draft there are 2 dead cards (basic + token) in every pack anyway, so your pool is 39 rather than 45. By that logic, you could certainly do 9 players (probably would use 4x 10-card packs, 40 cards each), or 10 players (4x 9-card packs, 36 cards each). With the power level of the cards, it should be no big deal to have a pool of 36 instead of 39.
If you had 10, would it make sense to break up the group into two 5-man draft pods, so people at least get to see a 2nd pick from each pack? Or would this run too much risk of having one pod that is, by chance, much more powerful, or breaks up combo peices or whatever? Would the answer be different if you're drafting a peasant cube with no combo?
How far do you think you could stretch? 11 people is 32 cards/player, 12 is 30 per player. Has anyone tried to stretch that far?
I have a 450 card pauper cube that is really synergy driven so I couldn't imagine going over 12 which would be 37.5 cards per player. I'd only do that if we had to, I wouldn't be happy to do so.
If I had to I'd rather split into two groups, a big part of drafting cube is seeing what comes back around. We don't usually play with enough people to use the whole cube so synergies get interrupted anyway. Not much difference there.
I wish this was a problem for me lol but seriously, might be time to think about increasing the cube size, nip it in the bud before it becomes a problem.

Meanwhile, I am attempting to build and grow a cube group. I don't really expect more than 8 to show, but I'd hate to turn someone away if we randomly had 9 or 10 (or, god help me, 11) people randomly show up one day.
I go to an annual event where I could even see more than 12 people want to join, but there would never, ever be a reason for me to go past 540 outside that event. For that, I figure the 540 could accommodate 14 or maaaaybe 16.
My cubes have always been big enough for a dozen people to show at once. But if you have a potent cube 30 card pools should work and you might have to make zome interesting choices with drafting and building.

180 might take some time so start with the suggested 45 extra cards and then go from there. I expanded my cube in 45 card increments until I got to where I was happy. Easier to test changes that way too.
I'd expand. In the meantime, it'd be first-come, first-served. Usually we end up with 4-6 players, so we play lots of sealed deck or 5x9 packs.

if we're more than 8 (which was only once the case), we do (did) a rotisserie draft. All cards face up, draft Player A -> Player Z, draft Player Z -> Player A, ..., until the whole cube is drafted.
Unfortunatley Rotisserie drafts aren't really great if you don't have all the time in the world. We did a 3 person one once and that still took forever.

Haven't done this to squeeze more players into a draft, but we've done something similar to this to help newer players out. The more experienced cuber can guide and explain pick decisions so that the newer player doesn't feel overwhelmed, since that can be an issue with cube.
As far as the OP's topic, I'm sure you could just add a ninth or even 10th in, but it would significantly lower the power level of all decks. Trying to wheel cards would be much harder. To help with signals and wheeling, it might even be better to just do 2 sets of 5 man drafts, with 4 packs of 9 there.

My Cubes - The Busted Cube. A fully functional, almost 100% custom cube. The project started out by asking "What if other colors got cards on the power level of Mana Drain,Ancestral Recall, and Time Walk?" Draft and enjoy!
Just add 45 cards for each person you want. I haven't updated my cube since innistrad, and that was when 720 was pretty fringe, but even then there was still enough quality cards. Seeing what has jumped into the 360/540 cubes, there is a rich amount of new content for 720. On top of that, if you needed to, say go to 990 (22 players) the card pools are still going to be good. Let's be realistic here. You all remember the trash cube that was used a that invitational in 2007. It still allowed decks to be made and it had interesting interactions.
With over 15,000 cards in magic, it should not be hard to get 990 great choices to make limited fun for a large group.
There is a big difference between weakening Archetypes vs weakening Limited Deck Power, some of the most interactive games I've seen was a bunch of mid-range jank slinging fists back and forth.
