I have drafted a peasant cube with citynoise's MODO cube--a poster on these forums, specifically the peasant pages--and it worked fairly well. Essentially, it went like this:
1) We drafted on tappedout.net. Requires an account, but ultimately easy. It's best to just make your deck on this site too.
2) On MODO, I sent city noise my deck list and whatever cards I didn't have in my collection, he sent.
3) We played games. Free cube on MODO!
4) At the end, we sent the cards back.
...aaaaand yeah! It was easy and awesome. The hardest part is getting people together, but if you have willing people it's easier. It was also easy for him to trust us as he wasn't exactly putting a lot of value up as well, but I imagine it would be harder to trust strangers when you're giving out cards with actual value for people to borrow.
I'm pretty sure there are auto-scripts that people run; I think Thea Steele uses one for her cube. It is something that def exists and is worth looking into if you're interested in that.

It sounds as if there is support for building your own cube and host drafts with it in MTGO.
I was unaware of such functionality..
