I'm looking to build a cube and am at the point where I need to cut cards to end up with a decent number for the cube.
I was thinking of making a 360 card cube, however in my playgroup I feel like we're probably going to be draftin with 4-6 players from which 4 will most likely happen most often.
Should the cube be 360 cards or would it be better to have a smaller cube?
360 is probably fine if your group is smaller, but it really depends on the experience you want when drafting. My group is rarely more than 4 players at the most, but my cube is still 550 simply because I want to be able to play with all of these cards.

It's not so much about the amount of cards in the cube for the choice people have. The reason I ask is because I'm afraid of the balance of colors whilst drafting.
Or well, I take it you still draft until you all have 42 cards with only 4 players, meaning about half of the cube won't be drafted, so there is a higher chance of not seeing specific colors. Theoretically you could miss 2 entire colors. Is that an issue?
It's not an issue. A good thorough shuffle ensures that all of the colors are represented, no matter how large your cube is. If you're drafting to 2-4 people and you miss an entire color, then you didn't shuffle good enough after the last draft.
I have 550 cards in my cube and we usually draft until there are no cards left, then shuffle the entire thing. With four players we will do some variation of a normal draft. We'll either run with the normal 3 packs of 15 cards or we'll change it up and do 4 packs of 11 or 5 packs of 9. With two players we'll either Winston draft, Grid draft, or Glimpse draft. For Winston, I divide the cube into four stacks and we'll run through one stack for the draft, giving us four total drafts before shuffling. For Grid each player gets 9 packs of 9. We can Grid three times. Glimpse requires more cards, but puts you into a better deck in the end. Each player gets 9 packs of 15 cards, which gives us just enough to do two Glimpse drafts.
I have a 540 card cube and when 4 or 6 players draft it we draft the entire cube using burn-drafting. I have a post on the burn drafting thread showing how you can do it.

Glad to see there are plenty of options to run a 360 deck (or an even bigger for burn drafting).
