Hey all hopped on the jund train about a month ago and am completely in love with deck. Tuned it a little bit to fight against the mirror and uwr mainly, and made top 8 in a local tcg maxpoint gold event. Unfortunately I had not practiced enough against the G/R Kibler deck and mistakenly underestimated how bad our matchup was against it, leading me to get dominated in the top 8 by it. The deck I used to top 8 is below and to go off of apteryx's point, I used 1 of Liliana main and it worked very well whenever I resolved her, especially against uwr.
The problem with the demon is that without mutilate to wipe their board the sac is far less of a problem and by t4 all they need is a few more points of damage. That's why the demon is much better in a Bg build. It's not terrible by any means but IMO its not a replacement for huntmaster.

The issue is that this format is all about getting value from ETB effects.... with Thragtusk and Huntmaster being the posterchildren for this. That's the big difference between them is that they can both come down and you could hit both with Putrefy. The difference is Huntmaster leaves behind a 2/2. Sometimes the 2/2 does nothing, but it's still 2 damage a turn and can block and attack, far better than nothing.
In a Jund Mirror situation, it is a pretty solid card. It's kind of hard for a regular Jund deck to deal with it. It's going to hit you for 6 every turn unless you sac a creature to tap it down. So you are forced to use removal, but then said removal is gone when they drop Olivia or w/e else.
Another difference though... is the aggro matchup. Where Huntmaster is LEAGUES better than DD. I saw Reid Duke (Jund) beat Brad Nelson (Junk Aristocrats) in like the 11th round at GP Miami. Game 3 he's stuck on 4 land for a long time. He has a Huntmaster in play against an Obzedat and 2 Voices, and he pulls the game out by flipping Huntmaster back and forth 3 times. Now, the only reason he had a chance was Brad land flooded and created a situation where he could flip Huntmaster over in the first place, but had the Huntmaster been DD, he wouldn't have even had a chance.
Huntmaster of the fells vs. Desecration Demon are like night and day in the Junk MU. One is infinitely good and the other is infinitely bad. But aside from that, DD is still not as good as Huntmaster or Olivia for this deck, case closed. BG likes DD better because they play mutilate and disciple of bolas, and frankly, because they can't play red cards.

You are missing a card in your list, but I looked it up on SCG, and it is the 4th Scavening Ooze.
I saw your list posted online, and I switched my list for a Sunday PTQ to something close, except I decided to main deck 2 Liliana of the Veil (-1 Scavenging Ooze, -1 Garruk, Primal Hunter) and changed up the board a little bit for an expected metagame of heavy UWR.
It did not go as well for me, mainly due to some poor play, some mulligans, and losing puts you with decks for which Jund is not heavily tuned.
Still, I think your list is very solid.

Yeah. That's the crazy thing about the metagame at some stores. There are some combination of decks (or just cards in general) that lead to certain archetypes being almost godly. The simple example is when you notice a deck that usually needs specific hate... but said hate isn't being played, obviously that makes the deck good.
Farseek is good when you farseek into huntmaster. I never thought of taking farseek out before Stephane gerrards decklist. I tried it out last fnm and I didn't miss them so much.

Upon deciding that there was a world without Farseek for mana fixing, I decided I wanted to utilize Zhur-Taa Druid as my mana accelerant of choice, as it provides pressure against players and planeswalkers alike without ever needing to enter the red zone unnecessarily. It also helps out the true power in the deck, Varolz, the Scar-Striped.
He quickly turns all of these dead creatures that Ooze didn't eat into more counters on other creatures, and leaves enough for the Ooze to eat profitably too (since you want 1-to-1 ratio or better on the mana/power exchange, plus the life never hurts.)
He allows Huntmaster of the Fells to become much better with Zhur-Taa Druid, since curving Druid into Huntmaster is very nice when there isn't a wrath immediately behind it, but it's only a 2-for-1 where we're back to parity with a draw step coming after one (assuming no mulligans, of course). Then, if there isn't a wrath, there's a Thragtusk, all of whom play VERY excellently with Varolz and his regenerate clause. I would honestly play a third, if I could find the room. Maybe you can?
Thundermaw Hellkite is the real threat though, being only a 2-of allows your opponent to respect his presence, which in game 2s and 3s, is where the game really begins. Did you take out the Dragon? Only you know.
Everything else is just from testing, though the most recent new test is the sideboarded Gaze of Granite, but I like the "clean board wipe with powerful cards behind it" idea it allows. I also like how you could cast it for 4 and keep a Garruk and Thragtusk or Thundermaw Hellkite in play.
The point I'm trying to make is that Jund is and has always been a "play the best cards" deck. There needed to be some kind of plan, and the plan here truly is "play the best cards".

If there's a lot of blue in your meta then Liliana is definitely the way to go. I would rather add more Lilianas than the 4th Ooze in the maindeck. +1 Liliana should make you feel bad, because you have to disard cards. There's nothing wrong with that.
There isn't necessarily anything wrong with letting Liliana sit there if you need your whole hand, either...
Exactly, thinking is allowed. It's good to tick her towards ultimate, but sometimes it's reasonable to not +1 her, like when there's only your fifth land and a Garruk in hand (against control obviously).

Welcome aboard! I switched over after tweaking RDW for months and not wanting to go Gruul. I haven't looked back
Here are my two cents on UWR: It can be a tough matchup Game 1, but Jund can hold its own post-board if you have the right tools. Their removal and card advantage is generally enough to keep our creatures at bay for long enough.
I run 2 Caverns, 2 Kessigs, and 2 Rakdos's Return main. RR is a very powerful tool. Even a turn 4 RR for 3 hurts (assuming you Farseek turn 2 and drop some sort of creature turn 3). Scavenging Ooze is, of course, wonderful against them too (assuming they're using Snapcasters and/or Think Twice in their builds).
As sideboard strategies go, you're right that people are moving away from Sire of Insanity. General consensus is that Sire is a bit fragile, and can be removed pretty easily before he drops their hand. Ruric Thar is being used as a replacement, because, heck, even if he dies to removal he does at least 6 on his way out. He also works as sneaky tech against UWR's Thundermaw Hellkites, since he's 6/6 reach and thus doesn't get tapped by them when they're played, but can still block them.
My sideboard also has a third RR and 2 Slaughter Games (always name Sphinx's Revelation!). Liliana of the Veil can also be useful, but I feel she's getting a bit less popular right now. Some people also throw in Underworld Connections, for recurring card advantage. Deadbridge Chant saw fringe play, but I've not seen many people stick with it (I do, but it never works )
What do I take out? Usually my non-board-wipe removal and my Thundermaws.
For the mirror, I find RR to be very powerful again. If you're using Abrupt Decay main, take it out in favour of the third RR. The trick with the mirror is to always be the first to play Huntmasters or Olivia Voldaren, since you can either kill their Huntmasters on the flip or steal their Olivia and Legend Rule it to death. Judicious RR really helps make that happen. In theory Deadbridge Chant would be great in the mirror but, again, nobody's made it work.

Is it true, that if I am on the play to take out huntmasters? I've heard a few people to do that... but im kinda skeptical
I don't do that.
But I kind of understand the sentiment behind doing so. If you are on the play, that means you will probably get more threats on the board and are less likely to need Huntmaster to "stabilize". For example, if your opponent has a fast hand of Ooze, Lifebane, Huntmaster. You can reasonably stabilize against that opening on the play with just a removal spell and Olivia or Thragtusk/Garruk. If you were on the draw though, that Thragtusk wouldn't hit the table until a full turn after your opp plays Huntmaster.
Underworld Connections is also good in the mirror.

Oh! And a dumb trick I've learned is that you'll almost always want to Farseek for a Stomping Ground. Garruk takes GGG; an overloaded Mizzium Mortars takes RRR, and Olivia and Scavenging Ooze are better with more R and G available, respectively.

Huntmaster on the draw is bad if you don't have instant removal, if you have it is super good
It's very mind tricky, let's say you are on the play and you drop hunt, then if your opponent drop hunt 3 things can happen :
1. he doesn't know what he is doing , you pass the turn and kill his hunt
2. he has instant removal.
3. he doesn't have instant removal, he mind tricks you that he has, ( why he plays huntmaster if he doesn't have instant removal ?? )
3 is super tricky and it only shows how mirror is skill intensive.
Shadowed by only Aristocrats, I think Jund in general is a overly skill intensive deck to play mirror/nonmirror. Ive seen alot of people play Jund, and not remotely come close to maximizing the potential of their cards in most games.

Oh! And a dumb trick I've learned is that you'll almost always want to Farseek for a Stomping Ground. Garruk takes GGG; an overloaded Mizzium Mortars takes RRR, and Olivia and Scavenging Ooze are better with more R and G available, respectively.

Shadowed by only Aristocrats, I think Jund in general is a overly skill intensive deck to play mirror/nonmirror. Ive seen alot of people play Jund, and not remotely come close to maximizing the potential of their cards in most games.
