Alright guys, Im really looking to get back into MTGO. I want to play a deck that is fairly easy to pilot but also posts up results (the reason for this is because Im rusty and want to get back into the swing of things before paying top dollar).

Like there are quite a few cards (4x Goblin Sledder 4x Mogg Raider) that say "Sacrifice a goblin: Target creature gets +1/+1 until EOT" ... I want to know when and on what I use these abilities? Like if i swing with three goblins and 1 of them is blocked/killed can I sacrifice it in response before lethal dmg. is dealt and give a diff creature +1/+1?
Also what do you usually use Goblin Matron to find?

Goblins is a strong choice for the Pauper format. It creates an overwhelming board presence, has reach by playing burn spells, and has a strong finisher in Goblin Bushwhacker. It's one of the top performing archetypes along with Mono U Faeries and U/R Cloudpost.
The Goblin Sledder and Mogg Raider are used for a couple reasons. The first is when you want your guy to kill theirs in combat and/or survive. So let's say you are swinging with your Goblin Cohort into my Kor Skyfisher. If you have another goblin on the battlefield, let's say Mogg War Marshal in addition to your Goblin Sleddder, you have a pretty sweet sac outlet to use the Sledder's ability if I block. The War Marshal in particular will leave behind a 1/1 goblin token when it dies, so you get a lot of value from those two cards.
The second reason is when the opponent has blockers, but you have a goblin that can get through unblocked, AND you have enough goblins to sacrifice in order to pump your unblocked guy for lethal damage. So if you have five goblins and I'm at five life with four elves, your 1/1 goblin that I can't block can be pumped to a 5/5 to kill me.
To answer your scenario question: if you have three goblins and I block one you can choose to sac the blocked goblin before combat damage to pump someone else. Damage no longer stacks, so you can't sacrifice something before damage and still have its damage go through. So if your guy is going to die in combat, the only opportunity you'll get to sac it is before the combat damage step.
Note that the sledder also has some value in dealing with the Echoing Decay/Echoing Truth cards; if you have (say) 3 goblin tokens on the board and your opponent targets one of them, you can sac that one to the sledder and the effect will fizzle. This also works against Capsize, and prevents the buyback effect from working.
Goblin Matron often goes for another Goblin Matron, in my experience; it helps you keep goblins on the board against someone with a lot of removal spells. The other thing you'll primarily be targeting is the Bushwhacker if you think you'll be able to get two or three (or more) goblins through unblocked in one attack.

I like to run a Tarfire to fetch out with the Matron just in case, though not a lot of other people do.
