Celestial Flare is terrific answer for all sorts of big problems.
Sunlance is good for Delver, but maybe not so much for the other match-ups.
I found main-deck Fiendslayer Paladin to be very helpful when there's lots of R spells flying about. I often have a couple of Paladin en-Vec in the side-board as well.
I've always wanted to play Stave Off against Twin, but no one plays Twin in my neighborhood.
Knights can be made to be very effective against Burn or things like Delver, but they are probably always going to suffer against Combo. They're not really fast enough to win before the combos can be assembled and the hate cards dilute the main strategy.
Is the general consensus that even though Phyrexian Revoker dies to any sort of removal at all, the body, and the damage it might push through, is worth the risk and so it is a better card for the sideboard than pithing needle

I don't think there is consensus on this.
I personally prefer Pithing Needle as it costs 1 mana and is not a creature. The choice of using Phyrexian Revoker depends if your meta has a lot of mass removal. A Pyroclasm or Anger of the Gods will get rid of Phyrexian Revoker quickly.
Collected Company was spoiled. It's a bit expensive at 4 mana for the GW knights deck, but it would allow the deck to potentially get additional reinforcements out of the deck.
This is what i played with tonight at fnm 2-2 jank deck w- cool deck had vensor blinking a skip combat guy, then guy got mana screwed 2-1

4 color zoo- was goblin guide, kird ape, bolts, ghor clan rampager. never saw my kor firewalkers or fiendslayer paladin. 0-2
bogles/hexproof 1st matchup got ate up, second one leonin skyhunter and timely mana tithe on daybreak coronet won the game for me. last game coronet got in three attacks with unblockable dude, got his life up to 26, i chipped away as he chipped away on me, got hero of bladehold and a bunch of dudes out, my last gasping effort was swinging for 17, he had 2 blcokers at 16 life. best match of the day 1-2

Only two modes on Dromoka's Command seem useful, and both modes are situational.
1) Preventing damage from a target instant or sorcery appears to be a red hoser. If the meta game is Pyroclasm or Anger of the Gods, then this card helps.
2) The fighting ability actually is useful to take out mana dorks, confidants, and other weenies that would normally not attack or block.
The +1/+1 counter might be useful as a combat trick, but I think I would rather pump my knights in the normal manner: Honor of the Pure and Light from Within.

I forgot to mention that if Knights want to dodge removal or damage, we still have cards like Brave the Elements. So, Dromoka's Command isn't as useful, despite having more modes.
None of the individual modes of Dromoka's Command are particularly good; there are certainly better cards for all of those tasks. But that's not the whole story. Having one card with all of those abilities saves space in the deck or the side-board. The sacrifice mode is almost as good as exile for things like Keranos, God of Storms; the damage-prevention is as good as Brave the Elements for protecting against R sweepers (but just that, BtE obviously has other uses); the other modes are kind of lame, but fighting is a legitimate tactic even if it's not nearly as good as something like Path to Exile.
One card can cover or augment several different areas of concern and the casting cost is cheap. I can see this seeing play in GW knights for sure. It's certainly worth a try. It won't likely replace BtE or PtE but it's a good candidate for the side-board because it can shore up a number of different areas and is useful in a number of match-ups.

A few advices:
1) Mutavault is good, but sometimes, even running 16 basics and 4 Cavern of Souls I have sometimes problem on leveling up Student. Be aware of it.
2) If you are running Puresteel Paladin I do recommend for u to take off Vial and put some more cheap equipments. U can not only rely on puresteel, but when the "combo" works, it gives a huge advantage
3) Steelshaper's Gift is good to pickup the best equipement for the moment, what incudes which sword u want, for example. Nowadays Im running 3of
4) Against Aggro, Student of Warfare is one of the best cards. Turn 2 3/3 first strike will stop almost everything. When is not the case, like against burn, he is the first to go out.
5) After some testing, I realised that Bonesplitter is the best choice. Im running 3of it.
6) Usually a build with not high number of creatures (due to the equipments) I do not recommend playing Light from Within. In the normal build, I recommend Vial, more creatures and Light from Within.

I think I can see where your concerns are on regarding the lack of artifacts, seems like 10 is not sufficient enough for Metacraft, adding more equipments such as you mentioned Bonesplitter etc, will also reduce the mana curve of the deck, there are quite a far bit of 3CC spells in the deck at the moment. Are there any cheap equipments similar to Bladed Pinions? Some flying is always good.
Steelshaper's Gift is necessary here, they are effectively your Sword of Fire and Ice "x2 and x3" or any other swords for that matter. Or to dig a Basilisk Collar if you need life. They are useful as a equipment toolbox or to help towards metacraft.
I am waiting to get Collected Company, since I don't run any 4 CMC Knights, and running out of gas is a big problem in the deck due to lack of draw effects. It's probably a 1-of or 2-of at most, though.
Sorry if this is a silly question but Ive been out of the game for a few months now. I'm starting to see a lot of lists running Wilt-Leaf Cavaliers nowadays (not limited to knight decks). What changed to bring these guys into the limelight? Is it just another knight to dodge bolt without a lord in play? With a Light from Within it beats both Tasigur and Siege Rhino but that is mainly only run in knights lists.
I am pretty sure you mean Wilt-leaf Liege, rather than wilt-leaf cavaliers. Cavaliers is pretty solid, though. The reason it is run is that it has apparently a better burn matchup than convential azban because it is faster and can gain life more easily, or can at least be tuned that way. It is worse vs. combo, though. Other than that, you pretty much hit the nail on the head. Being bolt proof and laughing at discard makes it pretty solid.

The other two modes are debatable. I could use Disenchant, Nature's Claim, Krosan Grip, or Qasali Pridemage for my enchantment and artifact removal needs. Those are all targeted.

I like your MB. Why Blind Obedience MB? I dont even like it SB. Should be 2 more dudes on place. I think that, without vial, puresteel build is stronger. I didnt like Knight of the White Orchid, maybe 2 more Mirran Crusader and/or Fiendslayer Paladin. Put the flying cat on place of Silverblade Paladin, evasion and lower cmc.

Don't. Tried it in casual and it sucks.
That technically would work, but you end up dedicating a lot of cards in your deck to manipulate your top deck.
You're better off with Collected Company. Knight decks need to dig more than we need to manipulate our top deck.
