Modern has changed quite a bit in recent months. any deck is going to have to deal with some threats. I was hoping to get some thoughts on the best sideboard cards right now. I haven't gotten to play in a while but I have a UB deck I designed that I hope is absolutely brutal. for a basically Delver variant deck, what cards should I look at for the side? which cards are best against Dredge or Burn in those colors?

Project Booster Fun makes it less fun to open a booster.
For dredge, you have cards like leyline of the void, relic of progenitus, tormod's crypt, nihil spellbomb, surgical extraction, and grafdigger's cage.
For burn, your options are more limited, but cheap interaction (dispel, disfigure), vampiric link (for eidolons or your own tasigurs/big creatures), or collective brutality are your best bets.
I think Corey Burkhart was using Sun Droplet. Ravenous Trap is also pretty solid against Dredge. You can do it with triggers on the stack.

Commander - Norin the Wary, Grimgrin, Adun Oakenshield (taking forever to build) (dead format for me)
I've always thought that a well timed Crypt Incursion would be good against Dredge, but of course nobody plays it and I've never actually tried it, so it might be horrible /shrug
For a delver variant, you want your sideboard cards to be very cheap, and preferably sorcery/instants. I run surgical in the side for dredge personally, leyline of the void also works here, but you will have to mull to it since hardcasting leyline is 100% too slow.
For burn, cheap countermagic and x/3 removal is where you want to be. Spell snare is brutal vs them, as are dispel, spell pierce and countersquall. Your goal is to get them empty handed when your above 10ish life, and hopefully you have a clock on board as well.

leyline of the void and relic are really good too
