My FLGS is has lots of Modern/Standard/Draft people when the local university is in session. We also have a good number of EDH players, but for the most part Standard is the biggest/most popular format. Most nights we get 10-20 people for Modern, but a good number of our Modern players (myself included) are college students who go home during the summer, which makes it INCREDIBLY hard to fire modern during the summer.
Back home my LGS fires Modern/Standard/Draft simultaneously most FNMs. We have no problems getting anything to fire here.
Limited formats make money for the shop. Non-rotating formats aren't all that profitable. I run a shop, and that has been my experience. I offer food and drink mainly as a courtesy to my customers. There is no profit there either. Singles would be the main way to support your local shop. If you don't spend money there they will go out of business. All of that aside, I always push Modern/Legacy/Vintage because it's what I prefer. I am constantly balancing the business aspect of the shop with my joy of playing the game. Every shop should be doing a little bit of everything. Balance is key. Your local game shop should be offering things for you to buy or participate in. Perhaps you could offer to run Modern events for them, or provide some feedback for them to think about?
I have at least 4 stores in my area that run weekly Modern events. However, my favorite LGS stopped running it in weekly events last year because not enough people showed up for it. It still runs larger Modern events (like SCG IQs) though.

All events almost always fire, possible exceptions being constructed events taking place at the same time as drafts during release weekend because people like fresh cardboard.
I basically only play modern and sometimes legacy, and I`m pretty happy with this.

I think a problem my store had with Magic was that traditionally, he only really dealt with Magic because he was the only store in town and one of the only 2 in the area that dealt with Magic, and the other one didn't seem, profitable at all. So he kinda just dealt in Magic to keep people in the area happy and give them a place to buy stuff. But a problem with that was that, he just did it to keep people happy but didn't really put the resources or time into understanding the game/product, so he didn't manage it as well as he could of. So it just turned into a lets do it the way we've always done it and not bother to look into ways to better.
One way this kinda led to a problem was that he never had a sanctioned FNM but his "FNM" for as long as I've been playing was just bring whatever you want, with vintage B and R rules, with the addition of Power 9 being banned. For a while, especially when I first started, this was never really a HUGE problem, as decks were never really that broken, it was more just good casual decks that newer players with unoptimal decks still could do well against every so often. I guess being in a time where the internet wasn't as popular for finding decks did lead people to still brew their own decks (this was like 2004-2007ish I believe). However, those players eventually moved on, either because they had kids and didn't have time, got jobs that didn't allow them the time to play or just got bored of the game. This lead to a few years of not being able to launch any Magic on Friday nights, from maybe 2007ish to 2010ish, when a few players who used to play got back into the game, this time mostly playing legacy decks, as they were a bit older and I find people then started using the internet more for decks among people around here. There were also several newer players around here, many with money to spend. This did lead to a lot more people spending money on products, as there were newer players who didn't have much and older players who were really interested in the new sets. I feel one problem that the store had during the time though was that they still had no sanctioned events, not even Prereleases or Game Days, which could have really decreased interest in a lot of product

This really increased interest in the game, that was really growing around here during that time. Still didn't sell singles at all but the growing interest lead to it not long after. I think that once PPTQs become a thing, the store did see a bit more an interest in competitive formats and more of a demand for singles that comes with them, which really caused my store to supply more. They finally made a sanctioned FNM for modern due to demand for it
so TL;DR, my store had to spend money and put effort into Magic to make money on it and find a balance that they needed as a store to make money
The store I attend typically has 5 rounds of standard and modern every Friday (at the same time). Plus other collectable games are usually running events too.
There are probably 6 other stores within 45 minutes (the one I attend is not the closest). None of the others run a Friday modern event. I'm lucky to have so much choice but there is basically only one store to play at since I basically only play modern. A different store, the furthest one, is the best place to buy.
I think the player base at different stores mattes a lot. My store consistently fires 2-4 pods of draft every FNM along with around 20 people for modern. Legacy fires with 8-16 but pretty much always fires and standard hasn't fired in a month. We usually have 5-6 people for standard but most of them just want to play standard but just play modern instead when standard doesn't fire. I really think it has to do with the store. Also the viability of brewing at my store can bring out a lot more people. I know that game days can get actually decently sized because people get to play their jank. People in general have been put off of standard because of the price and then more recently GW tokens murdering everyone. Maybe after roataion it'll pick back up.
In the largest LGS in the city, Modern is played two times a week plus 1-2 larger tournaments on the weekends, every month. FNM used to be Standard,b ut now its Modern. Each weekly has anywhere between 20-40 people.
My LGS is crazy, 3 FNM (Standard, Modern, and Draft), Legacy and Vintage on Monday, Standard Tuesday, Modern and Draft Wednesday, Commander Thursday, monthly $1k Legacy and Vintage tournaments.
My LGS runs a 3 round modern event on Tuesdays, usually getting 18-30 people. On Fridays they run both standard and modern, getting about 35 people for each of them. The past couple weeks they've gotten 43-45 people for both modern and standard FNM.
A store runs Modern on Wednesday and Thursday, Thursday entry is 10$, 4-0 gets something like a foil BOB or Scalding Tarn, price was great so usually 30-40 people shows up.
Another store runs Modern on Monday/Friday, but now less player shows up, I think it's due to the price structure probably. The last store only have Modern on Friday, around 20-25 people shows up.
I would say Modern is kinda healthy in our LGS, a lot of people play different decks.
