I agree that Merfolk would be decent choice in this metagame. While Jund is favored (at least a bit) Merfolk has a shot at beating it. If you want to beat Jund you could try 8 Seas version (list with 4 Spreading Seas and 4 Sea's Claim) and this one certainly has a good Jund matchup but it's worse against faster, linear decks.
I'm still working with Merfolk and testing it, but I like having multiple options. Any suggestions for control decks?

A Standard player at my LGS ran this for Modern at FNM and finished 4-1-1, so it's probably pretty good. Emracool, from mtgs, played him for fun after they IDed the last round with Titanshift and beat him pretty handily (Titanshift has a pretty good Jund matchup as well), but I was pretty surprised to see this guy with that deck right next to me for a few rounds.

UW Control might be an option or you could also try UW Emeria control.
UW control is sweet and I'm kinda sad that it's not seeing more play. It's got serious chops against all the aggro running around and can slug it out with the other midrange/control decks.

Been looking into Bant Eldrazi as a midrange deck. I've been trying to trade for pieces for Jund and looked into the deck since I have most of the pieces, seeing that it was more creature based than spell based like Jund. Would Bant Eldrazi be a good replacement for Jund?

They're both fine decks. Jund has been stronger for longer, but Bant is definitely a tier 1 deck and one of the decks to beat right now, so if you like it go for it.

I prefer decks with non-linear playstyles. Grind is good.
My favourite color is green, but that does not mean i do not want to play non-green decks. I am open for anything.
I am aiming for fnm with the occasional open or gp when they are close enough. This means i want my deck to be competitive.
Budget is around 700$ (+300$ if i trade my playset of confidant and my singular lotv)
The only pieces out of jund that i am not able to get as of right now is goyf, think i would be ok if i just replaced it with grim flayer until i get a hold of the real deal?

It's difficult to find something off the beaten path that is also very competitive. The internet makes metagames settle much more quickly through the hive mind effect, where new innovations and ideas spread very quickly. Thousands of people work on these decks to make them where they are. In my opinion, it's very difficult for one person to singlehandedly create a Modern deck that is very competitive. There are exceptions (Bloom Titan was under the radar for a long time) but there aren't many.
If you're going to start playing in SCG events I would recommend just biting the bullet and playing something tier 1 like Nahiri.

Control formula in modern right now is Latern (Prison), Moon decks (Blue moon, rg ponza) and Ux (grixis, uw, etc), but you could innovate if you are willing to brew and test (and lose) a lot.
Modern is odd, anything that can win a FNM can win a GP, so go for.
Both Infect and Suicide Zoo win and lose to essentially the same decks. Personally, I like Suicide Zoo a bit more. It's got a few more complex lines of play to it than Infect (but not a ton, Infect also has a lot of thinkers) and there's something about casting 1 mana 8/8s that appeals to me. You already have the land base and creatures if you have Jund/Junk and Zoo.
I would say go for Suicide Zoo and jam a bunch of games with it. Also, I suggest reading these three articles:
Mardu midrange would be a decent option. It's a solid midrange deck that has the best removal in the game good creatures like Dark Confidant and Kalitas and also Lingering Souls to fight grindy decks. It's not the best midrange option mostly because it lacks good threat to close the game like Tarmogoyf but otherwise it's a pretty solid deck.

Been bouncing between decks (elves, zoo, burn, budget junk) for my main and have finally settled on Merfolk. I love the tempo and resilience, and it seems to suit my playstyle as im running around 60% winrate on mtgo friendly leagues.
Now im looking for a secondary deck for when i want to take a break. Was thinking on U Tron because i already have some of the cards, but was hoping for suggestions for;
- a rogueish deck that is a lot of fun to play
- something not in tier 1 or 2
- not elves, zoo, burn, or junk
Blue Tron is fun, though it's definitely a very different playstyle than Merfolk. IMO I would also put Storm in those categories. It's not tier 1 or 2 (Eidolon </3) and a blast to play.

Card availability is more of an issue than card price. I prefer BG/x decks, mostly because B+G is the color combination of "Keep Calm and Nuke the World". Which lends me to believe that I'm more or less a pseudo-control/midrange player (definitely prefer a combo thrown in there somewhere though).
Bottom line: I want a deck I could take to a meta hostile to Abzan Company and be able to put up a decent fight.
