When it's easy, it's easy. But when it's difficult, it can be extremely difficult. Much like... any combo deck. Infect also suffers more from variance than some other combo decks.

idk man I played 2 infect decks at a local tournament today and I was dead by turn 3 every game. That's 4 games in a row. Didn't see much variance.
Turn 2 Invigorate, Invigorate, Invigorate. Game's over. Swords to Plowshares
Fun? Skill?
Fixed it for you

I sided in the Trinispheres and the Chalices. Got chalice out too late though. I was dead by turn 2 or turn 3 every game. I got chalice out for 1 on turn 2 once, but it was too late. I was already at 8 counters, and he didn't even need pump effect after that anymore anyway.
Deck seemed to work fine in my other matchups. Even beat affinity. At least in those games I have 20 life instead of basically 10 infect gives me.
So your deck does fine against other decks but loses to a fast deck. You deck looks super slow and much more casual than any sort of MUD deck I've ever seen. So... Welcome to magic?

Affinity is far from a tier 1 deck in Legacy though. Your deck would fold equally flat to any of the fast combo decks. Storm, Belcher, Dredge, Omnitell, Sneak and Show, Painter decks... Those are all going to be almost unwinnable for you short of getting hate cards out incredibly early. You're playing a non-tier deck in legacy against a tier 1 deck. IT should be expected it's going to be a hard matchup.
I would look into the MUD deck primers in the legacy section to figure out what they're doing that gives them edges in these sorts of matchups. Other MUD decks can easily get a Chalice of the Void or Trinisphere out much earlier than turn 3.
Most Mud lists run 3-4 Chalice and 3-4 3Sphere in the main, along with 4-8 sol lands and perhaps some Grim Monolith. Also Lodestone Golem. And... have you looked up competitive MUD lists?

I don't build decks based on lists. I just make up decks myself.

Thanks to Heroes of the Plane Studios for the amazing sig!
I was playing a colorless Eldrazi deck. What in colorless exactly is there to respond to that?

I have 3 in sideboard. Didn't see any of them in any game 2's.
Edit: not to mention the earliest they could come out is turn 3, and by then I'm dead.
