This deck looks super fun and I'd like to give it a try. If I do have fast mana rocks like crypt and mox diamond what would you take out? Also would you be considering grim monolith and mana vault?
I'd probably cut the birds or some other slower accelerant for fast mana. If you don't feel the need for this much removal, you can cut that stuff too, but be aware that not going for combo wins does make the win condition rather slow, and so having ample amounts of removal is necessary for buying the time you need.
Anyone else been running Doom Whisperer? It has been great for me so far. Very efficient beater at 6/6 flying trample, and the instant speed "free" surveil 2 can be amazing to dig through your deck.

I'm not a huge fan of mana rocks in a non-combo build of Gitrog. I can see running one or two, but I much prefer direct land ramp. I don't like to power out Gitrog before I have a sustainable land count. Sure you could run both types of ramp, but at what point are you diluting your actual threats?
There're a few rocks that go well with gitrog;
mana crypt and sol ring of course
mox diamond is clutch, cantrips late game accelerates and puts lands in the yard early game
worn powerstone is an additional way to accelerate into a turn 4 gitrog (at minimum) in a single card, sometimes a turn 3 gitrog off of Exploration or similar. Kinda acts like a 3rd Cultivate effect if you want that. I don't play this one but I could understand wanting it.
Gitrog draws so many cards when well designed that I'd err on the side of too much ramp and remove some later myself. But i'd be really cautious about the untap cost rocks (grim monolith, mana vault) - they're very strong but in a slower value deck they can be kinda bricky.
