I've only taken apart some of my Competitive decks and 1 or 2 casual ones - Zur (Shimmer Myr version), Ezuri, Claw of Progress, Inalla and Grothama. Those at least are the ones I can remember. I've certainly proxied up several decks to try over the years but found out they weren't for me.
Outside of Sidisi which I'm actively tuning right now, most my decks haven't changed too much since they were first built. The only exception to this is Mizzix which did go to a full storm build and I've since changed to use Thousand-Year Storm.
I too once sought to have a collection of EDH decks in all 32 color combinations but soon ran out of inspiring ideas as to what to build. I find that more than color combinations, it is unique card choices, strategies and deck mechanics that are engaging. Once I built an EDH deck around a certain theme or mechanic I simply can't be bothered to repeat those in another deck. My goal is that in each of my decks, the ~10 most exciting cards for that deck are also unique to that deck, or at least fulfill a different function.

That's why I haven't built Meren in paper yet or even proxied the deck to try out (which is what I usually do) because I've got a Karador list that plays Boonweaver combo. I've got other lists that play the usual Meren combos too so I'm trying to avoid that in Meren.

Having completed Brudiclad a few days ago, I am now at 63 active EDH decks, with several more at different stages of consideration or building. I have been spending some of my time off during the holidays updating and revising some of my older decks, as I periodically do, swapping in some cards from recent sets and this year's Commander product. Lots of Guilds of Ravnica cards finding homes, along with Rampaging Brontodon.

Sadly the time to get in to Legacy was always yesterday. My decks don't play dual lands (Just City of Traitors which has doubled in price since I bought them). A lot of the other stuff I had bought anyhow. I only own one of each dual land so I won't be buying anymore for a while.
