I was a casual observer of a Commander game, and a player had a mono-blue deck with Azami, Lady of Scrolls as the Commander. The player successfully cast Mind Over Matter and said that he can go infinite. I'm not familiar with this deck, so what is this deck's win condition? With just Azami and Mind Over Matter, I can see that he could just go back and forth between those two cards to draw out his entire deck, but how does the deck win? I didn't get to see his board state, so if there are multiple ways to win, I would just want to know the most likely wincon. Thanks.

Azami - tap an untapped wizard, draw a card.
Mind Over Matter - Discard a card, untap target artifact, creature (Azami), or land.
Tap Azami, draw, discard card for Mind Over Matter, untap Azami, tap her, draw again. Repeat.
Repeat the loop until you draw into Laboratory Maniac. Continue it until you have no cards in Library. If you don't have the mana to cast him, discard cards to untap lands, cast him, then tap him with Azami's ability to draw no cards and auto-win.
I usually use Mind Over Matter to untap Nykthos, floating a bunch of mana (just having Azami out guarantees breaking even, so everything beyond that is profit mana off Nykthos). You can choose what to discard to loop with, so I'll often leave a bunch of counterspells in hand with loads of mana floating, discard a bunch of lands to cycle through the deck with Azami/Mind loop, and am ready to stop any disruption when I go to win. Split Second is the only thing I fear but have never had it happen.

No problem. BTW, the win condition can also involve other things. I often took many extra turns (using the combo to filter through the deck for the spells) to build up an unstoppable board state as well. Infinite Capsize, pairing Venser and Deadeye Navigator, or with Peregrine Drake, etc. There are a lot of options. You can have access to basically any combo this way, but Lab Man is the easiest.
Basically, if you see a combo that draws the deck, you can understand that there is one of the above things that will actually end the game. I find LabManiac a little uninspired, and prefer combo-pieces that do things when drawn naturally, so my go-to is Rings of Brighthearth, Basalt Monolith for infinite mana then Blue Sun's Zenith. An arbitrarily large Zenith on the other players to deck them, Zenith goes back into library. Academy Ruins if one of the artifact pieces is gone. Time Warp effect if you already used your land drop.
