So I'm relatively new to commander (played with the Ezuri precon only) and I'm excited to build my own deck! Problem is, there's a million different commanders. Does anyone have any recommendations for really fun commanders to play? I'm a fan of all the colors but I'm a blue player at heart. Thanks a bunch!
If you give us more information about the kinds of things you like to play, we can give better suggestions. Are there particular styles you like or don't like, pet cards, or decks in other formats that you enjoy? Blue player is a good start but not really enough to narrow down the list.

Talrand, Sky Summoner and Azami, Lady of Scrolls are the most popular, with Talrand doing great as a cheap and fun "cantrip-mancer" and spellslinger and Azami being a rock-solid Wizard Tribal commander with some combo potential.

I would go differently about choosing you commander. Not simply by color, anyways. Choose a theme or mechanic you want to focus on and then choose a commander that fits these themes. Your choice of commander will then bring the limitations (cost, colors, drawbacks, weaknesses) that set the frame of your deck and impose the challenge in deckbuilding.
So if you say you like filling the board with big "must answer" threats or spells consider commanders that encourage value decks that tr to play above the curve:
I'll advocate for Maelstrom Wanderer. He's a 3-turn clock, so he's a decent wincon on his own, he gives your entire board haste which makes any creature more threatening, he lets you vomit your deck onto the table, and people are afraid to kill him, because that just means you'll cast him again for more cascades.

Animar, soul of elements casts big dudes and expecially big x-cost creatures (hydras!!!)
Mayael the anima for a "spin the wheel" kind of big creature summoning
Mizzix of the izmagnus or Jeleva, nephalia's scourge for slinging big instants and scorceries
