I think that I recently accepted that I'm a Simic kind of guy after toying around with various other combinations I tend to enjoy playing Blue and Green the most. Blue for the clone effects and card draw, while Green gives me ramp and is one of the main colors of my favorite tribes: (were)wolves. Ever since I forced myself to step up my game the latter has been less important but still its a reason why I'm enjoying the color.
I recently discovered my strong tendency to build red decks. The color has a lot of problems, like card draw, protection and the removal is kinda meh. But for some reason, i just really like the style pretty much every red deck i build.
I also like artifacts a lot. My first deck was Breya, though i rebuild it into a Sharuum deck, as i didnt like 4 color. As a result, my favorite decks are red/brown decks. Or monored if you will, but with plenty of colorless support. My current deck is Neheb the Eternal burn.
Apart from red, i like most color pairs a lot. Im not a big fan of green, to me it seems like boring red. And i really dislike Temur. I dont like Izzet or Gruul, and even though i like the idea of Simic value, none of the colors make sense to me. I think it actually has something to do with the color wheel, the colors dont mix well in my head. And combining all three makes it even worse.
I think Bi-Color is where it's at in Commander. Mono-Color leaves you too vulnerable to your chosen color's weaknesses, and the boost in consistency isn't enough to compensate. Tri-Color swings the pendulum in the other direction, where the increase in options doesn't outweigh the loss of consistency. I think Bi-Color is that sweet spot. Of the Guilds, I've developed an affinity for Azorius. No color has better answers on the stack than Blue, and no color has better answers on the field than White. It's also one of the best pairings for a long game - probably the ultimate or penultimate control pair, dueling with Dimir for high honors. In Commander, Black's proactive approach to stopping spells from hitting play isn't as optimal as Blue's, so there you go. This is the dawning of the Age of Azorius.
My favorite mono-color option is mono-black for a lot of the reasons expressed by others in this thread.
My favorite two-color option is green-white. At one point, I had five Selesnya decks due to all the various themes in GW that I wanted to explore. Right now, it's the only color combination I have with multiple decks; the two colors just have so much synergy that I really like how they all play out enough to want to keep four of them.
My favorite three-color combination is probably Azban followed closely by Temur. I had a lot of fun building various Temur decks till I settled in on one, and the color combination just has so much going for it. Ultimately though, Abzan is really my favorite. There is just so many good options for your decks.
For me, Grixis and Esper are tied for my favourite color combination.
Grixis makes me almost feel like an evil genius, and has a lot of interesting things going on with it, primarily because of blue and black. Red does add some nice benefits to the table like wheel and loot effects, artifact hate and copy effects (of the hasty variety).
Esper has a strong artifact theme with it (and I like my artifacts), and the actual Alaran shard is my favourite of the five from a lore point of view. Beyond that, I like playing control, which Esper is also adept at.
