The Mimeoplasm can copy creatures in graveyard, while Experiment Kraj can copy the abilities of all creatures in play.
Without a doubt, Mimeoplasm is easier with all the black graveyard shenanigans, but Kraj has an interesting side of copying land abilities once they are animated (either with Awaken mechanics or the usual green land animation) and artifacts (again, once they are animated). If I run Mimeoplasm, I can use Kraj in it as well, but it may not work out due to lacking the deck space for all the related cards. (Then there's Necrotic Ooze)
Experiment Kraj. Two colors provide a bit more consistency with mana base. You don't have to animate lands or artifacts to make him amazing, he can combo off a lot of creatures out there with not much effort, just adding some counters to them. Mimeoplasm is more of a beater than a combo engine. Also, saying "Experiment Kraj" in a menacing fashion when you cast it is fun, a brief warning before you unleash its full potential against the table.

Fun is always a requirement, and I love the two generals for the same reason as you; no game is the same, and it's great fun to surprise people with their own strategies. I will go for the best deck possible, then modify it according to my meta :3
Both can be made to be fun but I think Kraj will be more unique and although you will basically always win with combo it will always be 3+ cards involved which even to me is fair game. Tolarian Community Collage just did a video on Experiment Kraj which is worth a look.

Question: Do people use counterspells in these two decks and if so, how many? I feel that both are creature heavy and counterspells compete with the room available.
