Another strategy is to use one-and-done commanders that you only really care about resolving once or twice to get their effect. Things like Zada, Hedron Grinder can be treated as if it basically turns all your cantrips into Collective Unconscious. e.g. when you're running low on cards, cast your commander and then immediately a cantrip for a total of five mana. It doesn't matter if he dies because you can just do the same thing again next time you need cards for seven mana. Prime Speaker Zegana is another example and works the same way.
can you name a single red cantrip that targets a creature you control?

I have a good deck for you to try out. I have a Sen Triplets deck that primarily is a flicker deck. It’s like a double edge sword where if you have the commander out then your opponents would shift their focus on them allowing you to get out your more dangerous flicker combos. There’s removal, control, a ton of flicker engines, and an infinite turn combo in it. Hope you like this recommendation.
Most of my commander decks would fall under your requirement, also "good" might be a bit streched, depending on the playgroup.
I run an Esika, god of the tree reanimator deck, which aims to reanimate t2, latest t3, way before my commander hits the floor. I usually only cast her as bridge, if I have nothing else to do, later on. Or a human aristocrat deck, where my Lynde, Cheerful Tormentor is only at the helm, because she works best with the "humans ritually summon demons" theme I have going in their.
Artifact matters is also a good startegy not to much relying on the commander. Breya, Etherium Shaper at the helm, Ashnod's Altar and nim deathmantle in the 99 for a possible combo win, and the rest can be structured as you like. The colors have enought options to take advantage, i.e. add Sai, Master Thopterist if you want to build an army, or vehicles as main theme, or...
general tip: brew the deck without selecting a commander and once your done, select the commander based on your deck. Sure, this will lead to suboptimal choices but that way you will get used to the brewing style and once you're used to that, you can add the commander into the equation again.

Also Ember Shot, but it's expensive, and Needle Drop, but it's harder to set up for a huge card draw. And Orcish Cannonade, but that might kill you.Two Score, Minus Two or: A Stargate Tail
