I have Grimgrin zombie tribal, Yasova buff and theft, and Narset creatureless decks all in the works, but right now, everything is taking a back seat to the Cube I'm building.
I seem to be at about 45 cards in each of them, including non-basic lands, so I need like 15 more cards each before I feel comfortable calling them finished.
1. Actually get out to play more. I have probably only played 8-10 games in the last 6 months. Not a good use of resources considering we have 15 decks.
2. Work on updating the decks, and possibly dividing them into tiers to help match up with different metas (and prioritize which decks get the best cards).
3. Develop a truly degenerate deck to have on hand if needed. I had a weird Animar deck that fit the bill previously that I scrapped after it kept crushing people, so I am rebuilding it now.
If you want a cuttthroat deck on hand "if needed" I highly recommend a build of Uril just because he is fairly cheap. I can't see someone sinking money into a deck to have "on hand"
my projects are less about building decks though. mine are:
get my girlfriend into EDH
expand the playgroup
somehow prevent my playgroup from ever developing the 'arms race' mindset.
our group has been pretty good so far; i think its probably just me who'd ever go online to check up on forums and whatnot, and its not that we play pauper only or anything like that, but we don't actively go out to find cards. our decks still have a very 'limited' feel to them, and its been great!
i just introduced magic to my girlfriend (after going on and on about how awesome i think the game is), and we played one game of normal 60-card kitchen table with pretty much near-french vanilla decks. gonna amp it up as time goes, hopefully.
To get my ex into edh I built a deck for her. Asking questions like:
What do you want it to do?
What kind of creatures do you like?
How do you want to win?
etc.
Then built the deck from the ground up. And after she played it a few times, together we went through it and decided on cards that she/I didn't like and changed it together.
It ended up being a Derevi toolbox/weenie deck with some small prison elements to keep her ahead of her opponents. She ended up nicknaming it her "Let's go shopping" deck due to the large amount of search/answers.
I think the majority of the decks I've built in the last six months have been part of series (The Hobbit; Deep Space Nine; DC Universe). I'm currently finishing up a couple duel deck series, the tribal Eldrazi deck to square off against Nahiri, and a Tasigur/Voldemort Slytherin deck to give Dumbledore a run for his money.

There are no divisions: for ye are all one in Christ Jesus. -Galatians 3:28
Im between Wort Storm or Karador/Prossh. The last two would be tuned to punishing gaps in my playgroups decks (0 gravehate for Karador and for Prossh, its taking advantage of an open turn. Only 1 player seems to play counterspells/ways to stop combos.)
1) Foiling out the deck - Lin Sivvi (Toolbox), Vela (Ninjas)
2) Deck Research - Zedruu (Hate-Donate), Sidisi (Ad Nauseam)
Though there are like 4 more decks on the side (like this Patron of the Moon deck I'm still planning out), they're just there in the planning stage and I don't have plans on buying the pieces yet.
My current project is assembling an EDH portfolio containing staples of the format, overall solid cards (from broad to niche use), and the manabase to accommodate mono-colored to 5C (the Magic 30, etc.). The idea is to be able to open the portfolio and build any deck I want on the fly. It has been a rather daunting task thus far (quantifying what makes the portfolio and does not).

I'm in the process of doing that with my whole collection - it's a tough thing. Niche use can extend to so many different cards.
Glad to see all the other people in here interested in incorporating their significant others into the game. It's a fun little project with some great benefits.
New Projects:
Figuring out where to put a foil Lorwyn Cryptic that I just got.
Planning the hierarchy of The Ghostfather's criminal organization of spirit goons.
I'm trying to foil out my Geist (duel commander deck) and I'm unable to convince myself to buy any 150$ +++ FOIL cards (Force Of Will, Snapcaster Mage, Wasteland etc...) :|
I sold some cards so that helped but I'm out of gas now.

For 3 just build Ad Nauseam. You can go off turn two or three and wipe the entire table with an Exsanguinate. You can even use the new Sidisi was a tutor for Ad Nauseam, yay!
To answer OP, trying to foil out Jhoira at the moment, it's coming along but taking a little time...

The "Crazy One", playing casual magic and occasionally dipping his toes into regular play since 1994.
Currently focusing on Pre-Modern (Mono-Black Discard Control) and Modern (Azorious Control, Temur Rhinos).
Find me at the Wizard's Tower in Ottawa every second Saturday afternoons.
I've got two main projects going. First and foremost, wanting to get my best deck fully foiled. I'm six cards shy, not counting lands. General is Saffi Ericksdotter. Plan is to have a foil copy of every card where available, with any that aren't printed in foil altered. Once that is done I'll go back and upgrade my Unhinged lands to foil.
Secondary project is a five color dragon deck with all of the dragons being artist proofs. I've got about 10 of them so far.
I've got an overall project to have a deck of every color combination, because I feel like it will help keep my decks having their own identities. Currently the main things I'm working on are rounding out my Yasova Dragonclaw deck that I'm only going to use cards I already have or can trade for (it's 90% done) and doing the research for Doran, the Siege Tower and Krond the Dawn-Clad. I've noticed that I sometimes get too deep into the theme of the deck and don't include enough utility/card advantage to allow the deck to function, so for those two I want to be happy with the lists before I start dropping money on them.
Err... yeah. Most of my decks have a constant small pile of cards hovering near. A sort of 'these I want to try in the deck but need to figure out what to take out first'. And a handful more in a wishlist of cards-to-be-acquired. Heh.
On more specific, bigger projects:
Need to figure out whether or not I want to keep Isamaru (voltron-mana denial) as it is or try and find something else for monowhite (by far the hardest color for me to know what to do with...)
A billion-and-one "I hate the world and everyone in it" cards to try in Mogis.
Seeing if I can make Marath make even more (non-infinite) mana. Somehow.
Handful of decks just need tuning in the sense of making them more interesting to play and/or not folding like a paper bag to certain decks in our meta.

I've been slowly but surely foiling out my edh cube; about 30% done at this point. Certain foils are completely pie in the sky-territory though, so I'm mainly concentrating on foils for cards I just like to look at ~ balefire dragon, etc...
It uses a couple different themes. Mostly global pingers like Manabarbs and Spiteful Visions, with cards like Urza's Armor that keep me from being damaged by my own stuff. The other facet is several red and black Samurai creatures along with Godo in the deck, and Lovisa Coldeyes who combos well with Barktooth and several of the creatures. The deck runs more board wipes (6) and spot removal spells (9 + 4 abilities) than any other deck I have, and has the Sanguine Bond / Exquisite Blood combo as a backup wincon. For protection I went full Chaos, using Krark's Thumb and cards like Impulsive Maneuvers and Planar Chaos. And black tutors, of course.
So far its impressing me in playtests - even beating my own Rubinia sac deck that it has no right standing up to. But you're never really done tweaking a deck.
Right now, I'm trying to optimize my Jor Kadeen, the Prevailer deck (see sig, though the list is outdated). I tested it twice against a Jalira, Master Polymorphist deck and an Uril, the Miststalker voltron deck, and I went 1-2 both times. What I noticed was that I often found myself getting overwhelmed by bigger creatures before I could get my token armies up and running. While at the game shop I picked up a copy of Sol Ring and Thopter Engineer, and am planning to get Urabrask the Hidden. I'm still not sure what else to swap out in my deck.
Aside from that, I've been working on two other decks: a Dragon tribal deck helmed by Atarka, World Render; and a blink deck with Brago, King Eternal (having pulled one from a Conspiracy booster).
Tonight I was pleasantly surprised to trade for Thawing Glaciers, which is one of the last cards I wanted for my Kuon, Ogre Ascendant control deck. As I tighten up that list, I'm looking forwards towards a possible UW superfriends deck helmed by the criminally underplayed Medomai the Ageless. Unfortunately, I'll need to drop a fair chunk of cash on the walkers I'm missing.

I just finished building my Modern deck yesterday, and piloted it at our Modern FNM to a decent 2-2 finish. If nothing else, I'm learning to play it better.
With Omnath, Locus of Rage getting revealed, I'm planning on modifying my very first precon (Elemental Mastery) into a deck for him, featuring a strong Elemental Tribal theme and a minor ramp subtheme. Should be pretty sweet.

I got pretty far into making a custom 360 cube with about 200 custom cards, but that has slowed down. I've been working on the "Ass Cube" which is all garbage cards, and I'm very excited about that. Just started acquiring cards for Legacy Enchantress the other day which should be fun.

Finished Derevi, but not in love with it. It's good, but for one or two spike decks it can hold its own against, there are a bunch of "fair" and casual decks it just feels wrong to play against. So, I'm slowly separating out so I can play its Selesnya parts in a friendlier Gaddock Teeg deck.
I am so stoked about new Omnath... yet going by the comments at yesterday's FNM, so is everyone else, so I wouldn't exactly want FNM to become one big Omnath party post BFZ-release, so, I'm holding off for now, until I see how many follow through and make the deck. Still, "build Grumpy Omnath" is on the to-do list.
I'm working on a Bazaar of Baghdad for Dralnu. And I want to keep testing and working with the deck.
I'm working on a Gaea's Cradle for Seton and my Natural Order is in the mail! I also am thinking about tweaking the goals of the deck. Saffi Eriksdotter has a new direction I want to focus on. And I'm re-working Skithiryx, the Blight Dragon.
My new project is some kind of Wort spellslinger combo. Trying different directions and playtesting some.
