I've been tossing around ideas for several weeks now about what I might build as a new commander deck, and I keep running into roadblocks. Mostly, the ideas I keep coming up with are the same one's I've already built. Mono-black control/ramp, equipment/aggro, Grixis control, dumb combos, etc. Part of me wants to try something different. For me, that would require playing green in EDH. As a guy who loves the card draw, removal and sheer destructive force of red and black, that tends to make me want to look at Jund colors. The problem then becomes where to go from there; most decks seem to either go dragons or sac-control. So we have 10 Jund generals to choose from, but I'll be honest, I'm sooooooooo tired of seeing dragons that I'd like to avoid them at all costs. I know, I know. That's Jund's thing. That's why I've come to all of you fine folks. Does anyone have any interesting or fun deck ideas for Jund that I'm just ignorant too, and who have you used to head those decks? Preferably that aren't just dragons? I appreciate any and all feedback. Help a poor non-green mage out?

Sek'kuar, Deathkeeper. Just do what jund wants to do and get 3/1 sac fodder for no additional charge. I originally played Kresh the Bloodbraided midrange-combo, but I found that I often preferred 5+ 3/1s to a 20/20 Kresh.
I'm personally fond of Xira Arien. She's not the kind of commander you base a deck around, but she is very good if you end up drawing dead as she can, in a pinch, provide you with one or two extra cards. Have her out with Seedborn Muse and it's even more fun. I personally run her at the helm of a Jund Goodstuff list - no sac shenanigans going on there, just overall good cards backing each other up, providing consistent threats. My build only runs one dragon: Swift Warkite, for all your Eternal Witness shenanigans.
I have won once on commander damage with her. Kessig Wolf Run is fun...

I had a toolbox/Sneak Attack build for Kresh the Bloodbraided for a while that was pretty fun, and can work with other commanders at the helm, based on what you want. I was using Kresh as a finisher, but that was just personal preference.
Have you considered going Gruul instead? Green has very good card draw, especially in a creature heavy deck, so you don't lose THAT much by cutting black. It opens up a lot of new commanders with much more open-ended deck construction options.

I'd considered Gruul (actually my first kitchen table deck was Gruul werewolves). I'm probably way off on this, but most Gruul commanders kind of felt fairly stompy outside of Rosheen Meanderer. Like I said, probably way off again. I really gravitate towards black due to card draw and creature removal, as well as the flavor of the cards, but I have considered cutting it. Lord knows I've seen the green player in our group draw 20 off of his elfball deck, so I don't doubt green has the ability to draw when it wants to. Haha

I've always wanted to build an Eldrazi-focused Jund deck with Green's ramp, Black's mana doubling, and Red's rituals (maybe). I never really decided on a specific commander though. I mostly leaned towards Adun Oakenshield, Xira Arien, and Prossh, Skyraider of Kher, first two as card advantage and some help with redundancy for a linear deck in the context of Adun, and Prossh as a generically strong general that would also have synergy with a token- and sacrifice-focused gameplan.

Kresh tokens and Hydras. The interesting thing is when Kresh isnt the biggest creature you control forcing people shoot the bigger one. Use Doubling Season, Corpsejack Menace and Kalonian Hydra to make any Hydra or creatures like Mycoloth into an "answer me or die" card. Ive had good results with Blasphemous Act as Kresh often survives...

Kresh was my first Commander, and he is still my favored son. my firstborn.
That being said, he's really open-ended in terms of design direction and as a general doesn't bring much to the table except a reliable beater of considerable size. But, if i may, you seem a man after my own heart and as such a Jund Goodstuff list isn't really what you had in mind. Xira and Adun are both a little slow to inspire confidence, and that leaves Sek'uar, Shattergang brothers, or Bartel Runeaxe.
So basically it comes down to whether or not you want to play a control deck or combo/aggro deck, either way with heavy sacrifice focus. Or, dark horse option, play Bartel Runeaxe giant tribal... which would be difficult to pull off, but potentially quite funny.
personally, I would lean towards the shattergang brothers because i think they have a more interactive playstyle. If your overall goal is to add a little green into your life: take advantage of greens ramp and token production suite, lean on shattergang to keep opponents off their game, and enjoy the unparalleled late game shenanigans of a ramped out Jund list. Should be fun.
All of the rules allow for your general to be moved to the command zone when he gets put into a place that would be tough to get him back from, GY, Exile, etc. I am sure one day the rules will change and include tuck effects.
I always loved a control-style build (blue mage at heart), which is why I typically play blue in most formats. I also decided that I wanted to try out a different mix of colors so Jund seemed like a lot of fun for me. I went the stax route with shattering bros (in sig). It's a ton of fun and lets you play with "goodstuff" cards while being decently competitive. Fun green ramp with black and red destruction. Due to the ability of the bros. they are probably the best for a stax variant.
If you like volton, Kresh is just awesome. My friend has a Kresh deck that gets huge out of nowhere. If you like combos, then check out some of the Prossh lists on the multiplayer thread.

Xira Arien does make a a generic goodstuff Commander, but she can also lead the charge at the head of an insect tribal deck. In Magic, insects come in a variety of sizes and utilities so you can actually put together a reasonable deck with this theme. Unfortunately there's not a ton of tribal support out there, the notable exceptions being Swarmyard and build-your-own-tribal cards like Adaptive Automaton and Brass Herald.

He's one of the original Elder Dragons, he's got Legends style, and he's got superbreathing to help ensure you get a 2-hit KO.
