I would probably go with My Current Favorite deck (Superfreinds) or switch it up and Use ghave or even aurelia.
If I was going 1v1, Azami.
or even build a deck using cards that Should be banned. like my freindly lttle combo heavy Deck that repeats the continual abuse of Prophet, DEN, Omniscience and C.Rift. (Try dealing with C.rift very turn.)
I would use my Talrand, Sky Summoner deck because slinging spells is fun. Sure, there might be some time magic involved, but it's a far cry from locking people out of the game. Basically, by the time I'm taking extra turns, I'm going to be killing everyone, so the game will be over shortly anyways. (Well, that's the idea anyways. People do -- and should be -- running answers to all sorts of situations, so if someone decides to interrupt my plans or clear the board, I'm not gonna get mad.)
...and I might, as I do with new playgroups anyway, leave my Isamaru, Hound of Konda superspeed/land denial aggro, Darigaaz, the Igniter 'everything is destructible while I kill you based on hand size' and Pharika, God of Affliction 'sac-stax-central' home. Those tend not to fly too well with people not in my regular playgroup.

I just want to say that I love his attitude about MLD - the idea that it "counters" ramp is kind of silly. Sure, it sets back their gameplan, but the heavy land ramp user can recover from it quicker, and in a multiplayer game the person who is spending time developing a manabase is, in my experience, less of a target than the people who already have threats out. If P1 is ramp, P2 casts Armageddon, and P3 and P4 are trying to do their thing with non-land permanents, then P2, P3 and P4 are going to be fighting it out with their available resources while P1 is ramping up again...
That being said I would play Omnath, Azusa, or Slivers.

I wouldn't. While I appreciate Sheldon and what he does for the the format, he isn't the type of person I foresee having fun interacting with, in a game setting. I don't care to play games of EDH with people who dictate to others how to have fun/what is fun/etc. The fact that he says he would need to know about MLD prior to playing is silly. My group all have numerous decks (I personally have 52 currently, and building my 53 and 54). They range in power from silly to second tier broken (no one plays Narset or Zur). They all range in tools from Stax to MLD to zero removal. The variety here is incredible fun, and our decks have to be prepared for it.
If I only got one game I was able to play I would play my Lin Sivvi, Defiant Hero deck because the alters are so cool its fun to show off and play with it. Plus, I think in general its a fun deck to play against (assuming you aren't playing voltron)
Ink-Treader Nephilim - it's a blast to play, people usually like the interactions and I would wager that Sheldon has never played against this particular general (Because it's not a legal general - I would need to get pre-approval).

A version of DirkGently's Tasigur, maybe. He plays good cop quite well, until people realize there is no hope left.

I'd be super obtuse and play something like my old Krenko deck or Narset. Maybe my old Slobad blow-up-the-world. Magic is broken, and EDH is broken. And I like using broken things.
I would have to play my Animar, Soul of Elements deck, the deck is pretty fair for an Animar deck, no combos or anything, just big creatures that beat face. Though it does sometimes have powerful draws that lead it into a turn 6 hasty 20/20 Ulamog.

I'd build "You did this to yourself", just so the irony of that name is so much more so true.... because he did actually do it to himself. Also because it was a deck I proxied it up one time and it was fun.

In seriousness, probably either my Feldon reanimator or Prossh dragon tribal deck as my Riku deck isn't the best to bring out against new people who don't know me because it's built all around the various bribery/acquire/knowledge exploitation and either combos off infinitely or makes multiple copies of the blue epic and just spends the rest of the game playing everyone else's decks.

Yeah, I think I would rather drink wine with Sheldon (or even share an entire meal) than play EDH with him, most likely.
That said, if I was going to play EDH with him, I think I would probably bring Stax or some variant of d0su/urdjur's Dreamcrusher.
