My wife has recently shown some interest in picking up MtG and I was thinking that EDH might be a fun play to start since its unique and themed which i think might be something she would be interested in.
So i come to all you knowledgeable, wise EDH players looking for a deck/decklist that you feel would be easy for beginner to pick up and has some fun things to do but nothing super complicated.
I myself am more of a modern player but I have a fairly competitive Tesya deck with some infinite combos (which i will obviously not be playing against her right away).
I am thinking something GW that is lots of big stompy creatures so she can have some fun beating me in the face. But some sort of burny deck might also be fun too.
Don't worry too much about three colors and cheap landbases - Green helps immensely in this regard, both with spells and creatures. Just don't slow the deck too much with scads of ETB tapped lands.

I'll second Marath, but also, does your wife have a favorite legend? A lot of people, myself included, get really attached to their commanders. It's a more personal choice than picking a deck in another format and the last thing you want to do is give her a commander she isn't jazzed about.
Regardless of which general you end up going with, be sure the deck is mechanically simple to play. By this I mean avoid tutors, including fetch-lands and Nature's Lore effects. New players tend to have a hard time knowing how to use these, especially if they didn't build the deck themselves and especially in 100 card highlander.
Edit: I also agree with schweinefett. Token generators and anthem effects are reasonable straight-forward and give a good introduction to synergy in Magic.
I would stay away from black as long as possible. My gf has a problem in seeing how using your life as a resource is good.
To further this point try to stay away from effects that help your opponent out a little for a bigger effect for you. Which i think does make G(r/w) beats a good starting point. Just be ready to field questions of "Why does it feel like your deck is breaking the rules" or something similar.

Second this. Tutors are kind of information overload for a lot of new players. Keeping track of the board plus the cards in your hand is already a lot when you're not used to it, and adding another 50-60 unfamiliar options gets to be too much.
You could always go for one of the RG options and mix the two things you were looking for. Stonebrow, Krosan Hero or Xenagos, God of Revels should run straightforward strategies and still offer a lot of power.
