I don't have any decks worth 3k..but I have roughly 1500 into the 3 different decks that I carry in my deck box. I don't like to let it get out of my sight. I went over to a friends' the other day and afterwards I went to Subway..had it locked in the truck in the center console and I still kept my eyes peeled. I know exactly where you're coming from.
That's exactly the same stuff I do. My deck box has 4 decks in it and is worth a grand total of around $8500. If that box ever leaves my house (which is rare) it is never out of my sight and is never not touching me. The cards are issured but still, what a pain it would be to replace all that.
I have a Cradle and some WB duals; I'm boring. A quick trip to a site that prices foils also tells me that Urborgs in foil are stupid expensive compared to when I got mine, which was when PLC was being opened, so it was probably worth a grand total of about $3 to the right buyer.
Damn. My most expensive deck is only $500. I feel like because it's g/w, it's not going to cost nearly as much as a tuned blue deck. I have a kiki-jiki, portal natural order, horizon canopy, sneak attack, 2x chord of calling (1 I got for $1 and the other $10). I have a foil Temple garden(rtr), pact of negation(mm), and some other stuff. I think my most expensive cards are the ones that recently exploded in price(the horizon canopy and chord of calling). The most expensive card I ever had in an edh deck was a foil snapcaster when he worth $100. I traded it for a lot of good stuff. I generally don't care about foils and fancy stuff, as I can sell them and get more cards. There isn't a lot of $100+ stuff that I really want, besides maybe imperial recruiter.

Other notable stuff includes about a dozen Rev duals (missing Sea and Tundra, have duplicates of several of the others), a master set of the Zen fetches, about a dozen Ons fetches (just missing Mire), Mana Crypt, a bunch of Legends stuff, the aforementioned Cradle, and a fair amount of modern and legacy stuff. My collection is worth more than I like to admit.

My Doran deck has copies of Yawgmoth's Will and Linvala, Keeper of Silence which are the two most expensive cards I'm currenlty playing with, but I didn't pay for either. Cracked Linvala and inherited Yawgmoth's.

This is as expensive as a vintage deck. I don't understand why people make super expensive EDH decks then complain that vintage is unaffordable - I'm not talking about you.
I'm 4 cards away from foiling out my Kaalia deck. It has 7 cards that don't exist in foil form, so I'm at 89 of 93 foiled. If I were to go by SCG prices, it's worth about $3,300.
The last 4 cards I need will run me another $90. The cheapest card in the deck is a foil Footbottom Feast, at about 50 cents.
I'm only 18 cards away from foiling out my Ezuri deck, out of a possible 97 cards that can be foiled. The highlight there is my judge Gaea's Cradle, but it also has judge Survival of the Fittest and Natural Order, Rofellos, Llanowar Emissary, Priest of Titania, Mutavault, and Yavimaya Hollow as other notables. By the time that's done it will probably run $1800 or so, but I could probably tack on about $500 if I upgrade my foil basics, currently just 11 copies of the same AVR land I like to Unhinged Forests. Havent decided if I'll do that yet. Nearly all the cards for both decks I picked up since last December. I hope to be done with both by this December.

I think if you really went all out on a deck like that it would be much more than $6k. By going all out I mean all ABUR duals in black boarder as well as a BB Timetwister. Just the duals alone in BB is going to drive the price of the deck skyhigh.

Highlights include (ALL foils): 8 judge foils (Vindicate, Karmic Guide, Demonic Tutor, Sol Ring, Maze of Ith, Bloodstained Mire, Command Tower, and Vampiric Tutor), some costly land foils (Arid Mesa, Marsh Flats, the original Sacred Foundry and Godless Shrine, Kor Haven and Reflecting Pool), and the 5 basics are Unhinged. Other money cards include Baneslayer, Rakdos, Gisela, Avacyn, Iona, Angel of Despair, Elesh Norn, and the big non-creatures would be Wrath of God and Phyrexian Arena.
Among the cards that can't be foiled are my Moat, Volrath's Stronghold, and Plateau, Badlands, and Scrubland.
