I have got to say I still don't see the value in Thought Dissector. While Jitte, Swords, and Sol Ring are good cards, you are paying 5+ mana(and five mana is a VERY small amount, its the absolute minimum for you to become a lucky bastard) to get them. And well, if you think that paying at minimum 5 mana is good for a sol ring, then you should probably take a peak at Gilded Lotus.
I understand. I don't use either of these cards - I have just seen them frustrate players to no end when they DO snag something.
I, personally, prefer Bribery and Acquire. For that same "5 mana," you are guaranteed the goods, and still cause just as much frustration. But these are well known cards. We're supposed to be throwing "hidden gems" out there.
Something I play a lot, and don't see other people playing, is Seedguide Ash. 4/4 body for 4G (splashable), that propels you way ahead in resources when he dies (which he will - 4/4 is too threatening to just leave alone) is just awesome. He searches dual lands to boot. He's just awesome.

Speaking of lands, I was thinking about this topic some more today, and I feel like some simple and strong utility lands are oft-overshadowed by Academy Ruins and its brethren.
In particular, I love Oboro, Palace in the Clouds. Dodges LD and gets you landfall triggers. Definitely a fun card.
I'm working on my Sakashima the Impostor deck right now, so I'll be throwing out a ton of cards that I've used in it on occasion:
Phyrexian Processor: Probably my favorite card in the format. You don't even have to cough up a huge amount of life to make this powerful anyway. Even just 5/5s every turn will quickly win you the game in short order. The trick is knowing when to drop this and how much life to pay.
Vedalken Mastermind: Excellent for reusing ETB abilities, or just about save ANY permanent you need. He can also be saved through Riptide Lab while bouncing something else.
Psychic Overload: Aside from freezing creatures, don't forget it can stop ANY permanent. This includes artifacts and annoying utility lands! The permanent is tapped immediately, and it is highly unlikely the opponent will be able to meet the cost for untapping their frozen permanent.
Tower of the Magistrate: Excellent against Voltron generals that rely on powering their general up with equipment.
teferi's puzzle box is a card I played with to develop a draw engine with mind's eye. Great combo potential for a high risk, but probably one of the most fun cards I've been running lately. Casual multiplayer of course.
This card is essentially just flat out awesome. You can go politics with it, you can have the biggest threat (or biggest annoyance to you) automatically hit the lowest life total at the table. You can promise blue players high life totals when you cast it too, and it is typically sure to resolve.
On top of that its essentially the perfect revenge card "Oh whats that, you have been beating on me mercilessly all game and now I'm at 3? What goes around sure does come around hehehe."
Also makes people that gain infinite life face palm like no other. Pretty much awesomesauce all over.

I never really see anyone run Annul (even in 1v1), but that card has proven itself to be SO good in EDH. What your opponent thought was going to be a turn-1 Sol Ring blowout just got wrecked. Someone spends an entire turn tapping out for Thought Reflection, and you stop them for a measly one mana. There will always be something relevant to counter, and you're always trading up.
Although somewhat more popular than Annul, Null Rodcompletely ruins some decks. It singlehandedly stops all equipment, Oblivion Stones, and every mana artifact ever. The virtual card advantage you can get off of this card is insane.
Lignify also seems to be some tech that is catching on, especially in mono-green and green-white decks. It's really good.
Whim of Volrath -- all sorts of funny. "No, this turn I think your Cabal Coffers adds a black for every forest you control." More funny than good, I suppose.
Today, Anowon, the Ruin Sage was a bomb, I didn't realize how awesome it could be, good, but I didn't think it compared to other mono-B generals out there.
Faerie Macabre! -zero mana, usually uncounterable, graveyard disruption. I'd play this over relic of progenitus (if i'm in black) just because they can't really play around it if they can't see it.

I dunno if I've ever seen it, mostly because I don't go digging through the deck lists on here, but All Suns' Dawn is the most useful card in my deck. Privileged Position is also really good, and Sylvan Library is a pseudo-Top effect, plus it can net you two extra cards when you need them.
For a deck that isn't going to be using their general for attacking, & doesn't have a tap ability, Arena of the Ancients is amazing hoze on most other decks

Maybe it's just the Timmy inside me, but putting 12x +1/+1 counters on Kresh for 1 is pretty awesome. Also, if I have a Greater Good on the table, Dreadnought turns into a 1 mana "draw 12, discard 3" spell, a handy way to get stuff like Anger and Genesis into my GY.
Decimate. I know it's probably not as secret tech as some of the other stuff mentioned, but it consistently amazes me just how easy it is to play the damn thing. And of course, when you play it, it's a four-for-one.
rishadan pawn shop is good for stealie decks. Whenever I decide to run thada adel, acquisitor, I make sure to fit my pawn shop in there. Especially if you manage to snag somebody's general.
Have anybody tried Peacekeeper? I mean, I had in in my GAAIV and if you can't afford Moat, this is just about as good as it gets (yes, the effect is symmetrical though].
Reins of Power is hillarious in multiplayer. Try borrowing another player's creature to block a lethal attack against you.

I've been extremely impressed with the criminally underplayed Peacekeeper recently. She needs something like Lightning Greaves to stay alive, but it's amazing how much time she can buy you. I won a game last night against Mayael where I was staring down both Akromas, Iona, Plated Slagwurm, and about 4 other monsters, just because I was able to find Peacekeeper and protect it.
Speaking of little white creatures, Preacher is pretty great too.
It's probably no big secret, but Voidmage Husher is slightly underplayed. Reroute is also fairly underrated and can actually lead to some devastating blowouts!
In my Mayael EDH deck, I have a few secret techs I really haven't seen. Pure//Simple can really mess up a lot of decks, and basically screws over an aura heavy zur deck. Master Warcraft basically means "i resolve this.... and you die." I also play all the shadowmoor lieges in the deck, as a slight boost is always fun for me. And Brooding Saurian in my Omnath EDH deck, as my playgroup has a bunch of 'gain control' effects.
