My playgroup recently started playing a new variant of EDH we call Sheriff. I believe the original name is Bang and it may have been around for a while but I thought I'd share how it works and see if other people would like it as well.
Game is played with exactly 5 players.
Prior to the game randomly distribute between players 1 Plains, 1 Island, 1 Mountain and 2 Swamps. *KEEP THE CARDS HIDDEN* The purpose of these cards is to determine everyone's role in the game.
The Plains is the Sheriff - This player reveals that he is the sheriff to all players. *ALL OTHER ROLES REMAIN HIDDEN*
The Island is the Deputy.
The Mountain is the Renegade.
The Swamps are both Outlaws.
The Outlaws win by killing the sheriff. The Deputy protects the sheriff and only wins if he wins. The Sheriff wins by killing everybody but the deputy. Finally the Renegade wins if the Sheriff is the last one to die.
*I know this can sound kind of confusing but once you play it a few times you get the hang of it.
The Sheriff is the only role that is public information, and you cannot say your role out loud, therefore the point is to determine who people are based on how they play and who they assist. Even though people are "on" teams, because your roles are hidden and you can afford to be sneaky, everyone is considered an "opponent" regardless of how clear it is that they are on your team.
I urge players to try this format if you have a 5 man playgroup is it extremely fun. Or if you have already played this format how do you like it. I hope I have been clear with the explanation of how it works, if anyone has questions just post them.
One last note - Obviously this can change based on your playgroup but we have banned a few cards that are a little overpowering.
Maybe it works better with 6? In a 6-player game of bang, there are 2 deputy sheriffs, which balances things out a little bit. It also makes it easier to masquerade as a deputy when you're the renegade. Our playgroup loves both EDH and bang and I'm surprised we hadn't thought of this. We'll give it a shot next week and see how it goes.

We have been playing this, too. To further elaborate on the rules that we play (to further mirror the actual BANG! rules):
-Sherriff starts with 60 life, is immune to general damage, and infect is dealt as regular damage doubled (so Skythrix deals 8 regular damage, not 4 infect).
-If a player kills an outlaw, that player draws 3 cards.
-If a player kills a deputy, he discards his hand.
Even with the rules, the outlaws win handedly in every game we play. We've even considered giving the sheriff the ability to put any permenant under Arrest, blanking it's text box and pacifying it at the beginning of his first main phase until the beginning of his next first main phase.
We like it, will just have to keep testing ways to balance it more. Luckily we don't have much issue with obvious telegraphing.
