Also Reassembling Skeleton is the stuff, loved it in my Scars/Inn U/B control. Currently working on breaking him some how in modern, but always fun on the kitchen table.
Sakura-Tribe Elder is a staple favorite of mine for chumping a dude and ramping up my mana like a bro.
I tend to main deck Krosan Tusker quite a bit as well. Just love the fact that it is an uncounterable instant speed Divination in green. Plus, Tusker is a decent fattie for those situations when you need him to be.
My playgroup would probably say my signature creatures would be Akroma, Angel of Wrath and Megatog, but they don't fit the original post description. I'll usually default Ornithopter when I'm building a new deck, but I try to avoid having the same creatures in different decks. I do tend to squeeze in Darksteel Citadel if the manabase can handle it.
I´m a mostly Grixis kind of guy, so my signature trifecta would be Mulldrifter, Shriekmaw and Spitebellows. Evoke is, and will most likely always be, the mechanic i love exploting the most, from Undying Evil to Deadeye Navigator, can´t get enough of it
Not a creature but I put Phyrexian Furnace/Scrabbling Claws in almost all my decks. I know how powerful graveyard recursion is so I make it a point to be able to answer it, and if I don't need it then I can just cycle them away. I use it over Relic because I almost always abuse the graveyard myself.
A lot of my friends don't play graveyard recursion at all, so they think it's funny that I keep using such a "useless" card.
At any given time, I have a deck with Man-o'-War in it. He's kind of a shoe-in to any midrange deck with blue in it. Flametongue Kavu used to be in every red deck until he found a permanent home. Mirrodin Swords are usually decked but are subject to rotate between decks. Wrath of God/Day of Judgment/Damnation because I used to play a lot of multiplayer, and sweepers shine when you're wiping 3 to 6 boards at a time.
I used to try and force bad Niv-Mizzet, the Firemind decks in casual multiplayer all the time.
He doesn't go in every deck, but others would say Sun Titan is my signature creature.
It's a tie between Simic Sky-Swallower and Dragon Broodmother at the kitchen table. They are both incredible value and take over the game in a heartbeat. I just love ruling the skies. Plus, my set-foil Broodmother is gorgeous
This is a big question. I can't say I have a "signature creature" but one of may favorites would have to be Hypnotic Specter. Turn 1 Hippy is still a great play and one of the reason I love Mono-Black Discard.
Beyond that I can't pick a favorite, though I do think every Black deck is better with a play-set of Vampire Nighthawks.
I'm not gonna sit and build a whole deck around him, buuut flavorfully I like a turn one Deathgreeter...in my Rakdos deck, I like to think he's raising his hands to call for silence before the mayhem begins.

Another favorite of mines that i frequently run along side Rhox War Monk. Bant Zoo decks have the most curious (and magical) creatures; Snake-Elf-Druid, anyone? Then you run a set of Spirit Links and Armadillo Cloaks to cast on opposing creatures, you just feel like a Bant god.
I became associated with Kird Ape back when he was in the Ninth Edition. I still regularly play red-green aggro and midrange variants, most usually with the Ape included.

Its hard for me to pinpoint just one "signature creature" because there are several I'm known for using (and abusing) in the appropriate deck; off the top of my head, the short list would be:
