The main key to exalted is its many creature boosting one single creature to powerful levels. Normally those creatures are fairly small and can be taken out by the first two cards.
Any creature that can regenerate (Drudge Skeletons)can block the single attacker unless it's got trample (fortunately, most exalted creatures don't. However, many have flying)
Even simply spot removal like Terror can really ruin their day. Exalted players put all their eggs in one basket by playing all these creatures and then attacking with a single one that you just Terror and move on with your day. Or Unsummon, etc.
As someone mentioned, they're very weak when they're not attacking, so wipe the board then.
Also, exalted players tend to overextend and dump their hand/creatures all onto the table, hoping to maximize the effects of the exalted bonus. Which means wiping out all of their creatures with one Pyroclasm really ruins their day.
And there are some cards that handle single attacking creatures such as Chastise, devouring light, divine verdict, swords to plowshares, etc but these all deal with 1 creature attacking. Sweeping seems the way to go to solve your problem for a longer time. Or just drop Humility with some grafts and spikes and have a good laugh?
Spot removal on their fattest dude(s) before they declare attackers if you use burn, or after if you use hard removal (exalted doesn't trigger until one of their dudes attack) keeps you safe. Meteorainer's on the money.
Hex is a good card to take out a large number without clearing yourself.

also cards to give your creatures protection will provide another way to block.

and most any deck will faulter when a mass removal goes off, the new one is Planar cleansing which will clear most everything.
you could always try to rush through an exalted deck. goblins backed by a dolman gate gives you the ability to kill their creatures and hurt them, while they can only hit you with one creature that is easily blocked
also a lot of cards that give exalted are 1/1's so find a way to deal 1 to all opponents creatures, before they can boost them., Yamabushi storm for example
Primary and only casual rule: "any rule that is fine for the most part of the playgroup, is a fine rule". So any further thread with: "if somebody uses/does .... in a casual game, is it ethical/ok?", read the answer above.
- Being a "Johnny/Spike" means you like self-torture. You win often in casual, so everybody hates you; you loose often in competitive, so you hate yourself.
You might want to run fog effects with the maze of ith, 'cause they can still beat you with the creatures, it will just take longer since they can't use the bonus stats/abilities.

A better one would be Beloved Chaplain.

You just have to get ready for it, because turn 1 Akrasan Squire, followed by Aven Squire, turn 3 Rhox War Monk, turn 4 Rafiq of the Many and attack with the Rhox can really hurt.
