I can't quite seem to fit Sensei's Divining Top or Ivory Tower in here. I would also like to know if there are any super easy 1 or 2 card infinite life combo's.
I would start with a few cards you considered but ultimately chose against.
Pact of Negation is arguably the best counterspell in this format. I find it extra good in this deck, as it allows you to tap out to resolve Oloro (six mana), then counter, pay on the upkeep to not lose (five mana), and still have left open to draw off of Oloro.
Also on the counter list is Glen Elendra Archmage. This is one of the singularly most brutal cards at your disposal when you are ahead. What makes it so nice in Esper control is that it survives board wipes and can be reanimated.
If you have it at your disposal, you may also look into Academy Rector, since if finds any of your powerful enchantments and loves to be wrathed off.
On that theme, I really like Solitary Confinement in this deck, because we have a lot of draw engines that get around skipping our draw phase (Oloro, Arena, Underworld, Necro, among others), and this goes from buying time to shutting out the game entirely.
If you end up finding and Academy Rector, I would also highly recommend Omniscience as a world-beater. Extra points for following the strong enchantment theme and playing Future Sight (wrap your head around having those out at once).
All of this being said, my Oloro build is one of my "casual" decks, because I need to have enough decks that I can play against non-tier one competition or everyone locally will hate me

Opalescence really scares me unless you are finishing that turn! To me one of the great advantages of enchantments is that people don't like using up deck slots to deal with them. Sweepers, on the other hand, are very prevalent, at least in my meta. I would hesitate to subject my enchantments to that vulnerability, but let your testing be the judge.
The other point for now, is that I would really strongly recommend testing Solitary Confinement if you have/can get one. It really surprises a lot of people, and works so very well with our commander. While you may not be able to ride out the entire game under the shield it provides, it will often lead to at least one of your opponents being killed off before it is brought down (with you out of the picture, the list of guys to attack sure shrinks). Also, with that out, all of your countermagic can simply go toward anything that would dispel it, and nothing else is typically of consequence. Worth a look at least. It has tested well for me, but again, in my less competitive meta.
Yeah I just threw in Opalescence in there as another win con when me and the last man standing are the only ones in the game, I can use it as a quick suprise to get in for lethal with combat damage without him realizing it.
