This is my Arcanis list. I think it's fairly standard, nothing too offbeat. The main wincon is Mind Over Matter + Arcanis to draw my entire library and gain infinite mana with Elixir of Immortality as recursion, then win with Laboratory Maniac.
You really should slap Venser, the original wizard in here. He is just so awesome.
Also Crystal Shard to not only take advantage of your on EtB effects, but a well timed bounce can save your life!

Since you draw your entire deck with Arcanis + Mind Over Matter and can untap your lands with MOM, then you can recur your library with Elixir of Immortality for infinite mana.

Not as fragile as you'd think. Before I got my kozilek, this was something I used also. Unless someone has a krosan grip in hand, you cracking it puts the trigger on. The stack, even if it's destroyed your graveyard is shuffled in. It's definitely not something you want to do with a, Tormod's Crypt out, but it's perfectly doable.
And of course you can always pitch another card to dig for an answer to whatever issues may arise. MoM and arcanis in a way is like having true Omniscience, complete mastery over your deck and board.
Managed to get my hands on a Venser, Shaper Savant so I replaced Guile with it since I never seem to have the time to cast Guile unless I have a Leyline of Anticipation in play. I figure that the extra utility will serve me better, and it gives me another reason to finally get a Riptide Laboratory.

Steel Hellkite: I see what you mean about being slow, but with so little permanent removal I find it useful for that purpose, as well as giving me a creature I actually want to attack with. I'll reevaluate it though if it proves to just be mostly useless over the next few games I play with it. Ertai, Wizard Adept, Fog Bank, Ensnare, Last Word: Used to be fine for me, now a bit outclassed. I'll cut them as I find better cards for the deck. Lighthouse Chronologist: I kinda get what you mean about being winmore, and I hardly ever seem to get it active. If it doesn't prove to be good enough in the near future it'll probably be cut. Laboratory Maniac: This is just for the win along with Mind Over Matter, any suggestions for a better wincon? I used to just go for infinite turns and swing with my crappy creatures until people died, but it took too long. Desertion: I agree that it's pretty slow, but my meta is slow enough that it works well most of the time. Time Stop: Same deal with desertion, the effect is powerful enough that the mana cost is justified in my meta right now. Could easily change in the future though. Thwart: I like my free counters too much to want to cut it! Amnesia: Again, powerful enough effect that I'm fine keeping it in for now. It's been very good for me most times I have it. All is Dust: I want to gradually increase the amount of artifact mana I play, so I'd rather keep this in over getting an Oblivion Stone or something. Also doesn't kill my Caged Sun or Venser's Journal.
I keep thinking I should get an Eldrazi for my deck, probably Ulamog if any because the permanent destruction is generally more useful to me than the extra card draw from Kozilek.
Vedalken Æthermage is a cool suggestion, but I'm not sure I have that many wizards I want to find? Obviously getting Arcanis if he gets shuffled away is awesome, but other than that getting a Venser or Glen Elendra Archmage is a bit underwhelming.

He's a second copy of laboratory maniac that can also find your commander after or a tuck or turn into a counter spell _or_ bounce a permanent (or bounce a sliver/changeling, or flash-block).
The thing is, I never want to find Laboratory Maniac because by the time I want him he's already in my hand.
I do like the suggestion and I'll mull it over a bit more if I end up adding stuff like Trinket Mage, but for now I don't feel like it's really something that I want.
