Here is my decklist for Nath of the Gilt-Leaf. It's built to ramp with elves in the early game, force your opponents to discard their hands in the midgame (while building an elf army with Nath) and then swarm to win.
I cut mind slash and nezumi bone-reader because they were pretty worthless without Nath on the field. I went for more even discard with Unnerve and Syphon Mind instead.
I'm glad you reminded me about Hypnotist, though! I definitely need to find a spot for him because even though he's dependent on Nath, he results in wiping everyone's hands but my own and a bunch of tokens for no mana cost.
As far as tutors go: Honestly, I almost cut Demonic because I'm not a fan of the repetitive gameplay that they cause in EDH. I decided to keep it as another copy of Sylvan Scrying that can grab a few other cards to end long games after some deliberation. It's still a consideration to cut.
EDH is more fun when you roll with the randomness imo
to your edits: maze and restorer is a new combo i haven't seen before. nice. I don't think they'll make it in due to having no real synergy with the deck besides with themselves :\. Kamahl is a nice option I haven't put much thought into... and Quirion Dryad is pretty awesome anti-wrath tech (especially when I have a wrath of my own ;))
Also, Staff of Domination is an auto-win with Priest of Titania or Elvish Archdruid out with 4 other elves.

I could see playing maze of ith and krosan restorer for infinite mana on the attack step. Pumps from ezuri or Kamahl, Fist of Krosa
In beat down aggro decks, Quirion Druid can ruin the opponents wrath math if you have been turning their lands into creatures.
