I found this deck half a year ago or so, and have played it a few times. It's worked out very well, but I've lost the original poster of the deck, so I can not give credit unfortunately.
Anyway, here's the deck. The question is - what do I replace Sundering Titan with? I was thinking Seedborn Muse as she's part of Green Goodstuff IMO, but she certainly doesn't fit the function of the titan. Any suggestions?
I've also not updated it with the last few sets, so if you see something that would work better, I'll be grateful for your help.
What are peoples thoughts on adding Living Plane or Hall of Gemstone. Living Plane to stop wrath effects, and Hall to stop counterspells (most of them at least).

Hall of Gemstones is great. It also shuts down the casting of multicolored generals and multicolored cards in general.
I hadn't even thought of playing Living Plane like that, but if your meta is wrath-happy, that would be a great inclusion.
I do think you should fine a slot for the Muse. It works wonders with mana dumps like Ant Queen. My build is a stax deck and she is just brutal with Static Orb effects, but there's plenty of other things to do with her, even if it's just watering your Omnath chia pet or getting the most out of Mind's Eye.

A mono-U player will not be able to cast any counters that are non-0 cost on my turn (without mana rocks) since counters are most useful on other players turns, Hall will be quite valuable for protection.
I'm also thinking of adding Regal Force for more card draw.. I don't think I run enough creatures/token generation to make this worth the mana. Memory Jar seems like a much better option. Still looking for improved card draw - Any suggestions?

Most counterspells, the really good ones, are going to be Mono blue i.e Force of Will, Cryptic Command, Counterspell, rewind, last word Forbid etc So Hall wont stop those, as a blue mage will always choose blue. Living plan does seem nice but it will get targeted fast in a large enough game.
